White Chocolate Orange Cookies

feel free to use only all purpose flour if you prefer or if you cannot find WWP flour where you live. and please take these cookies away from my grabbing hands, por favor.

for 6 large cookies, or 12 average-sized ones

1/4 cup light brown sugar, packed
1/4 cup granulated sugar
1/2 cup whole wheat pastry flour [scooped & leveled, no need to spoon]
1/2 cup all purpose flour [same]
1 T dried orange peel OR 1 t orange extract OR 1 T orange zest
1/4 t sea salt
2 t Ener-g egg replacer [powder alone, don't add water]
1/2 t baking powder
3 T canola oil
3 T whiskey
3 T soy milk or other milk alternative
1 t pure vanilla extract
pinch cardamom [optional] OR pinch nutmeg [optional]
1/4 cup vegan white chocolate chips

preheat oven to 350F, line a cookie sheet with parchment paper or Silpat.

in a medium bowl, whisk together flours, sugar, baking powder, salt, egg replacer powder, dried orange peel [if using it, otherwise wait to add the zest or extract to the wet ingredients instead], cardamom [if using it].

in a small bowl, whisk together oil, whiskey, soy milk, vanilla, zest or extract if you haven’t used the dried peel.

combine wet & dry, stirring well, using your hands if need be.

divide the dough into 6 or 12 or whatever number of cookies you want there to be.
flatten your cookies to how thick you want them to be once baked: they don’t spread much at all while baking.
if going for 6, bake for 19 minutes or until the edges of your cookies are golden. be sure to adapt baking time if going for different size.

let cool on a rack. enjoy!

  1. I’ve always been really against white chocolate, but now that I can’t have it most of the time, I’ve wanted to have it! Crazy, huh… These cookies look really good though, so maybe I’ll just sub regular chocolate chips. :)

  5. oh my GOD. Those look so good. White chocolate is something I really, really miss as a vegan. I used to absolutely love white chocolate (i’m sure I still do… if only it were more easily veganized!). Very cool - these cookies sound great.

  6. I was just thinking about vegan white chocolate…i want to make peppermint bark for xmas gifts but it just occurred to me that white chocolate isn’t normally vegan. But you came to my rescue with that link. Thanks!

  7. Great stuff! One of the cookies looks at me. It has eyes. It says: “Eat me!”
I recently found a bar of rice chocolate in a store and was so happy about it, maybe there will be vegan white chocolate over here some day, too.
