VeganMoFo: PB-utterscotch Cookies

putting the chips Hannah found at PriceChopper to good use…
feel free to not add the carob/cocoa powder and make them purely peanut buttery/butterscotch-y instead. just be sure to add less soy milk, probably 2 full T worth of it.
they’re not crispy cookies, but get a bit more so if you flatten them with a fork right before putting them in the oven.
for 20 medium cookies:
1/4 cup granulated sugar
1/4 cup light brown sugar, packed
1/2 cup all purpose flour
1/2 cup brown rice flour [can sub whole wheat pastry flour instead, or all-purpose]
2 T carob powder [or cocoa powder]
2 t ener-g egg replacer [just the powder!]
1/4 t cinnamon
1/4 t sea salt
1/2 t baking powder
5 T soy milk [or other milk alternative]
3 T grapeseed oil [or other mild flavored oil]
3 T whiskey [or more milk alternative]
1 t pure vanilla extract
1/2 cup + 2 T chunky natural peanut butter
1/4 cup vegan butterscotch chips
preheat your oven to 350F. line a couple of cookie sheets with parchment paper or Silpat.
in a large bowl, whisk together sugars, flours, carob, baking powder, egg replacer powder, cinnamon, and salt. add butterscotch chips and stir.
in a medium bowl, whisk together PB, oil, soy milk, whiskey, and vanilla, until emulsified.
combine wet and dry ingredients until dough is formed.
grab a heaping T of dough and shape your cookies into ball, flattening them as much as you want them as they don’t spread while baking. if you make a crisscross fork pattern when you flatten them, they get a bit crispier.
bake for 14 minutes, let cool on a rack.

P.S. I just read the recipe again- I have everything called for, even whiskey! Er, well, bourbon. Same thing! (Daiku would kill me for saying that) I’m going to make these tonight!

i like that this recipe only make 20 cookies . . . just enough. i would eat these for sure.

Ok, I’m reporting back! Feel free to delete my glut of comments! I just made these cookies and had one with a cold glass of chocolate milk. The chocolate/bourbon/PB/butterscotch combo is unbelievable. This was my first time baking with brown rice flour- now I want to do it all the time, the texture is so wonderful! I hope some of these cookies survive until tomorrow, so I can photograph them during the daytime… <3 <3 <3

Ooh, butterscotch chips. I have some chocolate chips that need using. Obviously, this recipe is a sign of some sort.
