Simple Apple Yogurt Cake with Maple Icing

as soon as I saw Anna’s recipe, I knew I had to make it.

I had to sub a few things because I didn’t feel like a trip to the grocery store. how unusual!

I only had one Granny Smith, so there you go. Vanilla Silk instead of Plain. 1 cup whole wheat pastry flour, 1/2 cup all purpose. light brown cane sugar. pineapple juice instead of apple.
it had to spend the whole 40 minutes in the oven.
and a little maple icing on top once cooled down: about 1/3 cup powdered sugar with as much maple syrup as needed to have it be rather thick when stirring vigorously with a spoon to break any possible lump.

  4. I’ll bet that’ll be perfect in the afternoon with some tea (if I drank any, just sounds like people who like tea would enjoy apple yogurt cake with it, but maybe I’m wrong)
