VeganMoFo: Spelt Cookies
16Nov07
these are so perfect they make me want to drop on my knees and praise seitan, if I weren’t doing such a thing on a daily basis as it is.
they’re made with light spelt flour, crunchy natural PB, and maple syrup. that’s about it. can you even…?
recipe
I 1/4′rd the recipe and got 6 large cookies out of the deal, baked them at 350F instead of the 375F the recipe calls for* for 17 minutes.
* my oven is temperamental and will burn almost anything above this temperature,

Bad oven! (finger pointing tersely) Good cookie! (pats cookie gently)
Wow, I wouldn’t have imagined you could make such a simple cookie They look awesome.
oh my goodness, you KNOW that these cookies are right up my alley - I love simplicity (and less sugar, haha)!
those sound so good! i need to get some of those chips!
Of course, that’s possibly the one magazine I’m not subscribed to… Maybe I’ll look for it in stores. Those cookies seem like they would be worth the price of one issue!
Exactly what VeggieGirl Said! Looks great Celien!
Mmm, it’s cookie mania!
wowowow. I second what everyone above me said! perfect, simple cookies.
I <3 spelt! I find it’s one of the easiest grains to bake with.
mmm… me wants, simple and spelty! I bet they’re tenderrific.
Like Bazu, I <3 spelt, plus I really <3 peanuts! These look wonderful, Celine!
i have never worked with spelt flour before. since everyone is saying how good it is, i’m gonna have to make some cookies soon!
lovely cookies, as everyone else has already said. i have never baked with spelt before, but this is definitely making me want to…
I love the substitution of butterscotch chips… perfection!
I thought that you couldn’t get vegan butterscotch chips? Is that not true?
these chips are proof that you can indeed find vegan butt-chips, Lori. they’re delicious but not entirely healthy. healthy’s overrated anyway.
oh and an addendum to anyone interested in trying these: I recommend making a small batch of these and enjoying them the same day or day after baking them, but not really longer as they have a tendency to go a little soft after that. not bad, just less perfect. ;p
