to roast chestnuts:

rinse, cut an x with a sharp knife on one side of the chestnuts [careful of those fingers!], place in saucepan and boil for 20 minutes.
drain, cover with a towel to keep warm as it makes it easier to peel, remove outer shell, sprinkle lightly with oil of your choice and some sea salt to taste, roast for 25 minutes in a preheated oven at 375F. or you can pan fry them with a little vegan margarine until they’re tender and golden brown enough for you.

  4. I know the feeling! I’ve actually had to have a little talk with myself that I don’t have to mourn every meal that goes unphotographed! One day soon, psychiatrists and sociologists will have a field day studying the unique minds of food bloggers- hee hee!

    Thanks so much for the chestnut roasting tips. I’ve only tried once in the past, and have totally failed (uh… exploding chestnuts might have been involved…) so I will give it another try, using your directions!

  5. B, we’re too much alike for our own good! I seriously need to quit it with the photographing everything that goes into my piehole! fortunately it seems to be happening naturally at the moment so I must admit I am sort of enjoying not necessarily wanting to make things look good on my plate and also, the fact that I don’t need to organize everything in order to make sure the cats don’t get to the food while I’m trying to take a pic of it and so on. a break is nice, for sure.

    I hope you’ll like the chestnuts like that! I roasted them with the green beans and used peanut oil, threw in a bit of sea salt on there and died of the biggest foodgasm ever as I hadn’t the chance to eat chestnuts in far too long. too bad the season for them doesn’t last forever, but I guess it’ll be a way of appreciating them even more when they’re around.

  7. toaster ovens would be perfect for roasting! and it wouldn’t heat up the whole house. I actually hadn’t thought of that before, ha. I’ve never had chestnuts, but I found a recipe in vegetarian times for a stuffing with them. and don’t worry about your lack of inspiration or anything! you deserve a break once in a while :)

  9. We all need a break once in awhile, Celine, we need a chance to gather all our motivation up…I know how you feel, at the end of this semester I am completely burned out-even though I have quite a long list of various assignments to finish (or start!).

    I’ve never had roasted chestnuts, or chestnuts for that matter! It seems like the perfect time of year to do this now though…especially with the stores repeatedly playing that song that makes mention of them !

  11. Celine, this is a well-deserved break! Your blog is amazing and your photos are always lovely and I cannot even begin to imagine all the work that must go into maintaining this fantastic blog!

    Thanks for the chestnut tips, by the way–my mother has a chestnut tree and is always sending me chestnuts in the mail…I never know what to do with the little buggers! Currently they are sitting in a pretty pot on my windowsill…I think roasting them sounds like a much better use!

  12. Thanks for the instructions re; roasting chestnuts, there is a knack to this, no question. I can remember, years ago while living in Toronto, the smell of these, from the street vendors at Christmas, it was so nice and Christmasy, made up for the lack of snow LOL.

    I agree, those are some pics.

  14. Hmmmm must be contagious! I too have that same can’t be bothered thing going on and total lack of motivation. I’ve been blaming the hot weather but maybe there’s a de-blogging bug going around. Hope the motivation comes back soon but in the meantime enjoy the break! (It’s not like you don’t deserve it with all the yumminess you post all the time!)
