VeganMoFo: Peanut Butter Granola

no pic right this moment, but I’ll try to work on it later today.
it’s delicious and makes a small amount [probably 4 tiny servings in all] so feel free to double it if you’d like. I used my toaster oven to make this as I have more control over it than I do my big-butt normal oven. sides, I always feel guilty turning the big one on as it sits right next to the fridge. who designs a kitchen by placing an oven next to a fridge, I have no clue. anyway, I’m digressing…
adapted from here…
1 1/2 cups old-fashioned rolled oats
1/6 cup agave nectar + maple syrup [fill half of the 1/6 cup with agave, and the rest with maple]
1/6 cup crunchy natural peanut butter
1/4 t pure vanilla extract
pinch salt if using unsalted PB, otherwise it’s fine without
preheat oven to 375F. prepare a small baking dish with non stick cooking spray.
stir PB, nectar & syrup, vanilla, salt [if using] together until emulsified. throw in oats, stir well until they are coated with PB prep.
pour into baking dish, bake in 10-minute increments, stirring often, until the oats are light golden brown. it took about 30 minutes for me.
let cool in baking dish.
don’t panic if the granola is not crunchy-looking when taken out of the oven, it’ll harden as it cools down.
variations:
- add 1/4 t ground cinnamon
- mix in chopped nuts and/or dried fruit after the granola is out of the oven
- mix in chocolate chips or chunks once the granola is out of the oven. be crazy and add it when it’s still warm in order go get chocolate-covered granola chunks
- use to make Granola Bread
- go on a peanut butter rampage and use the Peanut Butter Bread dough to make Granola Bread.

This sounds so awesome. I love Nature’s Path Peanut Butter Granola and I’d love PB granola even more if I could make it myself. Plus no refined sugar! I hate sugar in the mornings.

I’ve been wondering about kitchen design, too. Anyway, I have not been wondering about this great granola recipe and will definitely try it out.

Another peanut recipe - yay! I always make granola at christmas. I think Chase will get this in his christmas stocking.

I love that this has no refined sugar in it–thank you so much! I am not a fan of peanut butter myself (gasp!), but my family IS, and I can see this in pretty little jars as holiday gifts…

There was a pb granola I used to eat in high-school…so good, but I’ve not been able to replicate it. Your recipe sounds fantastic, and the hubby would love it too.

I’ve always wanted to try a “nut-butter-based” granola… and now I have the perfect recipe to follow!! thank you for posting it, Celine!! I can use other nut-butters for this, right?
