I have raisins…

…coming out the wazoo, so expect a lot of recipes/pictures using up the stuff in the coming weeks. when will I learn my lesson that yes, buying in bulk via amazon comes out cheaper, but not if you end up not getting rid of it all by the time it is supposedly expired?

my friend Kristi sent me some Emergen-C a long time ago, but I just got around to using it. so tasty! I think I have the strawberry flavor. placebo effect: I already feel a bit more energized/slept more soundly than I have in a long time. I know, I know, it’s probably absolutely not related, but let me hold on to the idea.

oh and as long as we’re talking healthy stuff, I’m eating an apple a day these days. you know, because it keeps the doctor away, right? looooooooving on the Pink Ladies and Granny Smiths at the moment, they’re perfectly tart and crisp and omg.

I just baked a cinnamon raisin bread in the “Just for Dinner” bread machine [the one that yields a tiny loaf in 45 minutes] and the whole house smells delicious now. I’m thinking, french toast for the husband. it really IS a tiny loaf, and he has no trouble eating the whole thing by himself. hey, he’s 6′4″, the man’s gotta eat.

so yes: that was a rather pointless post, but I felt I had to update for some reason.

cinnamon raisin bread recipe? sure. you can probably use the usual guidelines to make it by hand, but only one rise will suffice when using the quick-rise or bread machine yeast.
definitely not as healthy as the 100% WW bread from the other day, but hey: live a little.

slightly adapted from the handbook that came with the Just for Dinner machine.

1/2 cup slightly warmed up pure water [90F tops]
1 T vegan margarine
1 1/4 cups bread flour
1 T soy milk powder
1 T light brown sugar, packed
1/4 t sea salt
1/4 t ground cinnamon
1/4 cup golden raisins
individual baggie [aka 2 1/4 t] of quick-rise yeast or bread machine yeast

place all ingredients in the order recommended by the machine manufacturer. bake, and let cool on a rack before slicing.

  3. I love bulk buying! If only I could still do so here at school, but I’m already storing my snack foods under the bed since there isn’t enough space… And that doesn’t bode so well for my midnight snacking, but that’s a whole ‘nother story entirely. By the way, I love Emergen-C! I mix them into plain soy yogurt all the time to get the flavors I want. I currently have the lemon and coffee flavor… And while I wouldn’t recommend mixing the coffee one into water and drinking it straight up (bleh!) I do highly recommend both of them as mix-ins.

    yum, Hannah! I love that idea of stirring the emergen-c into a soy yogurt! now if only I could find vanilla or plain soy yogurts more easily over here…
    what snack food are you hiding under your bed and which one’s your favorite? I am so nosy.

  5. I love bulk buying too…but that can be the problem, you get tired of the stuff! Cinnamon bread is so good though, that I’m sure friends would be happy to help you consume your raisins in that way :-)

  7. I love raisins! And I read that they have a compound that protects teeth, so I usually snack on them when I’m sitting at the library (otherwise I’d chew my pencils… or my fingers…) My favorite combo is raisins and almonds- they are just so perfect together. Gotta love the apple a day, too!

    P.S. I too live with a tall hungry person- Daiku is 6′2″ (or 3″?) and I’m so jealous of his metabolism, it’s not even funny.

  8. No, this post isn’t pointless at all! I love raisins and I think I’d love that bread as well :) Now I have to go and make my parents buy a bread machine (I know they want one).

    (Not that I don’t like kneading, by the way. I just think a bread machine would be so much quicker!)

  9. You should try the Cranberry Emergen-C. That’s my favorite one. I’ve been drinking 2 packets a day for a few years now. I swear it’s helped to boost my immune system. I’ve gotten to where I can tell if I haven’t had any in a few days.

  10. well I LOVE raisins, so keep the raisin-containing recipes coming!! that raisin bread sounds fabulous; as does your french toast idea with it (mmm…) - I wonder how the bread would taste with the maple-butter??

    I haven’t tried Emergen-C, but it seems to be quite popular these days. oh and my dad and I eat at LEAST one apple every single day, all year round (yeah, I know, we shouldn’t eat apples out-of-season; but we can’t help it!!) - right now, we’re hooked on the Jazz apples, Braeburn apples, and Honeycrisp (yes, they’re vegan, haha) apples :0)

  16. I bought the soymilk powder at Lassens, the local health food store. you can order it from amazon too. I always go for the plain, full-fat version, it’s the best for use in breads and other cupcake-related goodies.
