Coconut Raisin Cookies
November 28, 2007 at 4:15 pm | In Uncategorized |adapted from the original that I love so much. if you’re a fan of the texture that Isa’s Gigantoid PB cookies have, there’s no doubt you’ll love these. unless you hate coconut…in which case I have no witty repartee but feel a lot of sadness instead.
I bake mine in the usual muffin top pan, which probably makes them the same size Isa’s Gigantoid ones are, aka 1/3 cup worth of dough. you can definitely make them on a normal cookie sheet of course. and smaller if you prefer. I get 6 the way I make them.
30 minutes or so before beginning, place 1/4 cup + 2 T golden raisins in 1 T rum. stir and let sit until the raisins have plumped up just a bit. do NOT drain them when it’s time to stir them in the cookie dough. you can also chop up the raisins before plunging them into the rummy goodness, if you want.
1 cup shredded coconut [doesn't matter if it's sweetened, it's what I use]
1 cup quick oats
3/4 cup wheat flour [not pastry]
1/2 cup spelt flour
1/4 cup chickpea flour
1 t baking powder
1/2 t baking soda
pinch sea salt
1/2 cup coconut oil [have it be at room temp, not necessarily liquid, but manageable enough to combine with granulated sugar]
3/4 cup granulated sugar
2 T molasses
2 Ener-g eggs [3 t powder + 1/4 cup warm water, whisked vigorously until thick and foamy]
1 t pure vanilla extract
1/2 t ground cinnamon, optional
preheat oven to 350F. prepare muffin top pan with non stick cooking spray, or cookie sheet with parchment paper/Silpat.
in a large bowl, whisk together flours, baking powder, baking soda, salt, oats and shredded coconut.
in another large bowl, whisk together coconut oil and sugar until well blended. add vanilla, molasses, egg replacer and whisk until completely emulsified.
place wet mix into dry mix, stir a little. add raisins and use your hands if you have to, there’s no shame in getting messy.
once the cookie dough is mixed well, separate it into 6 [or more] equal parts, flatten them in your prepared muffin top pan [or on your cookie sheet], and bake for 15 minutes. the cookies should look just a bit puffier and golden brown on the edges. they will harden when cooled down, on a rack.

YUM. I’m loving coconut these days. oh, guess what?! I picked up Sharon’s sorbet from Trader Joe’s the other day, coconut flavor, of course. ohmy. it’s amazing! thank you for posting about it! I had been keeping my eye out for some! :)

Mmmm, oatmeal and coconut is my favorite. If I had a muffin top pan, all my cookies would be gigantoid size.

I’ve never been too keen on coconut, but these cookies sound fabulous with the raisins!! My dad’s obsessed with coconut, so I know for SURE he’d love these :0)

Oh I love coconut and I love oatmeal cookies! With the addition of rum, these may indeed blow my mind. I had not seen the muffintop pan yet either, but what a great idea!

Muffin pan cookies = perfectly shaped cookies. Ahh! They look beautiful! I may never grow fond of coconut, but I would eat one of those cookies in a second.
