No-Bake PB Chocolate pie with Yes-Bake Chocolate crust

it’s funny that this pie tastes/looks rich and rather outrageous, because it’s actually not that bad for you. it contains no refined sugar, and no margarine. I used Dutch chocolate powder for the crust, but you might want to go for simple unsweetened cocoa powder since Dutch has a rather strong flavor. I like it like that, personally.
if you’d rather pace yourself instead of eating the whole thing in one day, it freezes quite well. just let it thaw in the fridge for a couple of hours, or if you get a sudden urge: just leave it out for at least half an hour.
serves 6-8
for the crust
1 1/4 cups all purpose flour, spooned & leveled
1/4 cup cocoa powder
pinch sea salt
1/4 cup sugar in the raw
5 T canola oil or other neutral oil
6 T cold rice milk or other milk alternative [might need less, stop adding once the dough is formed and sticks together]
place all dry ingredients in a large bowl, preferably using your mixer. mix well.
add oil, keep on mixing, add milk and stop once the dough is formed.
using a rolling pin, roll down your dough into a circle. place in your greased/floured 9 inch round cake pan and press down.
bake in a preheated [375F] oven for 20 minutes, using pie weights if necessary. set aside, let cool.
for the filling
12oz package extra firm silken tofu, drained
1 cup vegan chocolate chips
1 cup crunchy natural peanut butter
1/4 cup agave nectar
melt your chips in a microwave-safe bowl. go 1 minute at a time tops, stirring often. set aside.
place tofu in food processor. blend until smooth, scraping sides as needed. add peanut butter, agave, and melted chocolate. process until perfectly blended, scraping sides often too.
place filling in cooled down crust, using a flat knife or a spatula. place in fridge overnight. use peanut butter caramel sauce from V-con or any other syrup [chocolate works well too, or how about some vegan whipped topping?] before serving.

I suck at describing things, Deb, but yeah I’d say it’s between a normal crust and a cookie. kinda crispy. not too sweet.

Thank you for the recipe! I am glad that this freezes well, because I am the only one in the household who eats peanut butter. And I eat tons.

You have to be kidding me with that pie! It looks outrageously good, and there’s almost no sugar? Awesome! I’m too lazy right now to make my own, though. Can I come over and have some of yours? Oh, and I’m sorry the day didn’t go your way, but hopefully the pie made it all better :)

This pie is SO good…made it over the weekend and it was gone within a day (made a rather indulgent lunch as well as dessert the previous night!!). I haven’t been able to find agave nectar in New Zealand so I used molasses (we have a real thing for that in our house) and it was delicious.
