Basic Whole Wheat Bread, version 42348284.1?

Posted by Celine on December 8, 2007

I’m currently hooked on making sandwiches. so we have bread on rotation in a box, and it never lasts too long.
what do I put in my sandwich? well…I’m not proud, but right now I go for: stone ground mustard on one side, vegan margarine on the other, sprinkle o’ nooch, and plenty of romaine lettuce. yup, that’s it. I said I’m not proud!

here’s a bread recipe that has no refined sugar or margarine in it. and it’s another 100% whole wheat one too. it’s adapted from the Laurel’s Kitchen bread book.

1 cup + 2 T purified water, room temperature
1 1/2 T agave nectar
2 T peanut oil [or whatever you have and fancy]
3 cups organic whole wheat flour
4 t vital wheat gluten [place vwg at the bottom of one of your measuring cup, top it up with ww flour; remember to spoon the flour into the measuring cup and level it off with a knife, don't scoop it up]
1 t sea salt
1 1/2 t bread machine yeast

place ingredients in order recommended by manufacturer. use WHOLE WHEAT setting, since it will preheat the ingredients and knead the dough the way it should be kneaded. let cool on a rack before slicing.

(makes a 1 1/2 pound loaf)

to make them into bread rolls:
use the DOUGH setting on your machine. punch dough down once risen.
divide into 6 equal portions, shape into rolls.
place in a prepared 8×8 pan, bake in a preheated oven at 375F for 22 minutes, or until an instant-read thermometer finds the rolls to be between 195F-200F.
remove from pan, place on a rack, and let cool.

NOTE: if you want a shiny crust, brush some milk alternative on the rolls prior to baking them, or give this a try: it really works!

I don’t know what it is, maybe the weather? But I have been totally into sandwiches too! The bread is totally what makes or breaks it, of course.

Hmmm I’ll confess to you to make you feel better. My sandwiches lately have been peanut butter and strawberry jam…together…on sandwiches, muffins, crumpets. Worse, half of my sandwiches have been vegemite or just plain marg!

I need to start making my own bread, I’m just afraid I’ll love it too much and start eating bread everyday. I have to limit myself because it’s just too good.
Your sandwich fillings sounds like something I need to try….

Hi! Nice recipe…I hate having to buy expensive 100% whole wheat bread here. I’m much better off making my own.

but can I make this without a bread machine? How?
