Cranberry Nut Oat Pilaf

prefer to keep things salty, even when it comes to your oatmeal? here’s something for you.

adapted from the actual box of steel-cut oats I bought from Vons

serves 4

1 cup steel-cut oats
3 T EV olive oil
1/4 cup chopped red onion
1 clove garlic, pressed [let it sit 10 minutes at room temp once pressed (before cooking it) so that it can develop its anticancer properties! saw this tip in this month's Vegetarian Times]
1/2 cup chopped toasted walnuts
1/3 cup dried cranberries
1 t dried thyme
3 cups vegetable broth or 3 cups purified water with 1 t better than bouillon paste
salt & pepper to taste

in a medium to large saucepan, heat oil on medium-high, add garlic & onion and cook for a couple of minutes, until the onion gets transparent. be sure to keep an eye on it so that the garlic doesn’t burn!
add cranberries, walnuts, thyme, and oats. let toast on medium heat for 3 minutes, stirring often so as not to let anything burn.
add 3 cups of water/broth, bring to a boil. lower heat, cover, and let simmer for 25 minutes or until the broth has been absorbed, stirring occasionally during cooking time.

serve with a side of winter salad made of chopped radicchio and endives, sprinkled with a bit of coarse salt, freshly ground black pepper, a touch of white balsamic vinegar and black truffle olive oil.

  1. Now that’s different… not sure I could eat my steel cut oats without my standard vanilla soymilk and maple syrup. But it does sound very fancy. Beautiful photo too!
