sorry about the silence. been busy plotting something up and I really haven’t felt like writing much. I’ve also done a lousy job of keeping in touch with friends and family. shame on my butt!

a few things I made in the last few days: [not including the Gee Whiz spread that can be found in both Vegan Vittles & Ultimate Uncheese: the stuff is too sexy for its shirt.]

Sweet Rice Cookies

I made these with white chocolate chips, but they’re tastier with semisweet or dark ones. still, delicious!

YRR Soft Oatmeal Cookies with Cream Filling

Apple Pie Filling with Streusel

gingerbread apple pie filling with streusel. not the prettiest thing ever, but it could be the tastiest one I’ve had in my mouth.
[filling from the gingerbread apple pie in VWAV, streusel from the apple muffin recipe from the same book, but using light spelt flour for it. about 1 T more.]

Ezekiel Bread from Damn Tasty Vegan

ezekiel bread from Damn Tasty Vegan. insanely good & healthy. I wasn’t sure about if the 1/4 cup of red lentils it calls for was raw or cooked, so I just went for raw, cooked them, and put the whole thing in it.

I have a lot of shortening to finish up, so I’ve been using it in most of the foods I’ve made lately. I prefer oil or margarine, but I’m not in the mood to throw more items at the moment.
which brings me to the fact that you can use it to make cheezy quackers, 3 T is enough instead of the original 1/4 cup of margarine called for. I updated the post again.

Spelt Cheezy Un-quackers

Whole Wheat Cheezy Un-quackers

the WWP/shortening ones browned more quickly, they were done after about 15 minutes.

and here is the recipe for the cream filling of the oatmeal pies. it makes sort of a paste that you can work with your fingers. I love it!

1 cup icing sugar, sifted
2 T vegan, non-hydrogenated-or-any-other-such-crap shortening
1 T vegan sour cream
1/2 t extract of your choice

place everything in a large bowl, or in the bowl of your stand mixer, blend until combined and thick. as mentioned above, the filling is so nice and thick that you can handle it with your fingers, and it doesn’t melt. plus it’s delicious. could we ask for anything more? I think not.

makes a generous amount for 7 cookie sandwiches. I halved Yellow Rose Recipes/Joanna’s recipe for her soft oatmeal cookies, baking them for 8 minutes. I also used shortening instead of margarine, whole wheat pastry flour instead of AP, and vegan sour cream instead of tofu. hey, I told you I have foods to finish up! I want to try these following the original recipe eventually, but they came out mighty tasty like that too.

  3. Looks like you’ve been keeping busy! I love trying to use up ingredients that I have on hand. That cream filling sounds so sweet… is icing sugar just powdered sugar? I am guessing so. And yay, I have vegan sour cream that needs to get used and some cookies I made last night… hmmmm. That gives me something to do later!

  4. Ahhh! Your cookies look so, so gorgeous when you bake them in your muffin top pan! And I think your gingerbread apple pie filling is really pretty too. I would eat that, for sure.

    And since you seem to be the queen of ingredient substitutions, I shall ask you a question: In your personal opinion, do you think substituting apple sauce for soy yogurt would work in muffin recipe? :)

  5. ruby! when soy yogurt is called for in a muffin and it so happens that I don’t have it, I usually go for either blended silken tofu or sour cream. but I’m sure applesauce would be ace too!

  13. Thanks so much for the link to chickpea cutlet. I bought so much cooking book in the last few months that i couldn’t afford to buy Vegonomicon right now. I’ve been dying to try those delicious things that everybody was talking about.

    I’ve been looking at the Gee whiz in my uncheese book and i bet i’ll try it soon

    aahhh ! and now i really have to bake some soft oatmeal cream sandwich cookies! and cheezy crackers!
