Kristi's Gingersnaps

my friend Kristi of almond granola and chocolate raspberry streusel fame [pictures here] sent me a batch of delicious gingersnaps, which I of course threw myself upon, along with the adapted recipe for them. well I didn’t throw myself at the recipe, I’m not that big a glutton. or am I?
anyway, she accepted to have me copy it back over here, so have at it!

sidenote: Kristi is the moderator for one of the vegan food log communities on LiveJournal. don’t know about you, but I’m curious and like to see what other people eat. which I guess is what reading food blogs the way most of us do is all about, d’oh.

yields 100 mini cookies

2 1/2 cups unbleached all purpose flour
2 t baking powder
2 t each ground cloves, cinnamon
1 t ginger powder
3/4 cup vegan margarine
1 cup turbinado sugar
1 Ener-g egg replacer
4 T molasses

cream margarine and sugar. add Ener-g egg, then molasses.
sift all dry ingredients and blend in.
chill well in fridge…
preheat oven to 325F, prepare cookie sheet with parchment paper or Silpat.
form teaspoon-sized round balls and roll in coarse sugar.
place on prepared cookie sheet and bake for 10 to 13 minutes.
let cool on a rack!

Note from Kristi: I got this recipe back in the 80’s, long before the internet existed for public use, so my copy is on a yellowing sheet of dirty paper. There are probably many variations of the same gingersnaps all over the internet by now. Mine was given to me by a friend of my mom’s–she photocopied hers.

  8. I love that you enjoy making both giant and miniature cookies that are also incredibly delicious. I made 100 mini cookies for a baby shower once - it was fun.
