My Favorite

Carob Split Bar, from Damn Tasty Vegan. made with pecan nuts and chopped bittersweet chocolate this time. I chose to mix all the wet ingredients in the food processor, I guess that makes me rather un-punk?
I had one of these [made with raisins and walnuts instead, as well as dark chocolate with coffee] to take with me when I left the country, and I must say it is the ideal traveling “companion”: filling, rather healthy, totally satisfying, and easy to carry.
somebody needs to keep me from making it too often, though. there’s only so much working out a person can do during the day!
[I'm sad this cookbook isn't available for purchase anymore, I really really wanted to get a copy for my parents...]
speaking of favorite though, I made a white bean/wild rice salad for lunch and it’s proof once again that simplest is often = bestest:
3 cups cooked wild rice
15 oz can white beans, drained and rinsed
2 T white balsamic vinegar
2 T extra virgin olive oil
2 T chopped green onion [or your favorite kind of onion]
mix it all together in a large bowl, chill in the fridge for a couple hours.
[sidenote: I didn't eat all this by myself. I had some alongside button 'shrooms, Brussels sprouts leaves, tomato, and alfalfa sprouts cooked all together in a little grapeseed oil, garlic, and peppercorns.]
and to finish off that “favorite” post, this is a carob bar that I found in a little health food store my parents love to go to. it’s delicious and tastes just like milk chocolate, which used to be my favorite back when I wasn’t vegan. although I have now become a big fan of the darkest chocolates one can find, this bar definitely hit the spot while I was back there reminiscing about the “good old days”.

Mmmm. That carob split bar looks fantastic. I like your modifications, sounds even yummier!
And you are completely right. Simple is best. I love rice and beans. One of the best combos!

OH NO!!! Damn Tasty is no longer available, this is sad news. I never purchased a copy because I was waiting to buy it for my B-day next month.

The carob split bar looks so good but the salad does too! I love white beans in salads!
If the Damn Tasty Baking Guide is no longer available, you could maybe make some copies of your favourite recipes and make a nice booklet and give that to your mom?
Oh, by the way I looove that chocolate, too. I can eat a whole bar:)

I used to be a purely milk chocolate girl! I’ve been hearing about rice milk bars & have seen them, but have not picked one up yet. Have you had one?

Thanks for the tip on the carob bar. The only ones I’ve seen around these parts are the Goldie ones (and they’re pretty pricey).

I agree with you, sometimes simplest food is the best food. I was wondering, where can I get the Soyabella Carob bar? It looks like something I’d love :)

Paulina, I looked it up online but couldn’t find anything. I got mine in Switzerland, a friend appears to find it in Germany too, and from what the label says, it’s made in the Netherlands. sorry I can’t help you more…

Basic usually is best when it comes to regular meals if you ask me- That’s really the only way I can cook. While I love tackling complicated baked goods, it’s a whole different story when there’s a pressing need to refuel. Looks like a perfect rice salad you have there!

ooh, that salad looks like a perfect balance of chew and tang. I’ve been slowly learning the benefits of simplicity myself, it’s a good kitchen mantra.

haha to veggiegirl’s comment - i knew she’d flip when she saw that carob bar! i’d like to see a carob bar that tastes like dark chocolate, though. yum!
simple is the best! the meal is the part that gives running fuel, and after eating that is usually the time when i have enough energy for being elaborate. and that’s where fancy desserts come into play! that carob split bar sounds like it’s to die for.

Since I first saw this post, I’ve been trying & trying to pick up a used copy of Damn Tasty Vegan online, but it seems that no one is letting go of their copy. I would kill for the Carob Split Bar recipe!
