Spelt Pesto Bread

look here if you don’t have a machine, and here if pesto bagels are more your thing.
for 4 small loaves:
1 cup + 2 T pure water
1/3 cup pesto of your choice
3 cups + 6 T light spelt flour
1/4 cup vital wheat gluten
2 T light brown sugar, packed
1 1/2 t sea salt
2 t bread machine yeast
place all ingredients in pan following manufacturer’s instructions.
use DOUGH setting.
prepare a baking sheet with a Silpat or parchment paper. preheat oven to 375F.
remove dough from machine and place it on a lightly floured clean surface. punch dough down, separate into 4 parts. shape into loaves, place on prepared baking sheet.
bake for 20 minutes or until loaves sound hollow when tapped at the bottom. I ended up turning off the oven and leaving mine for 5 more minutes in there, since the thermometer indicated they were done, but the hollow sound wasn’t “quite there” yet.
let cool on a rack and enjoy. with a slice of peanut butter chocolate pie!
just kidding. although this is what we’ll be having today, a simple no-bake pie made of Mori Nu chocolate pudding mix, silken tofu, natural crunchy peanut butter, and chocolate shrapnels. oh yeeeeeeeeeeah…

That bread is perfect! My Mom was just talking about how she wanted to make spelt bread, so I think I’ll send here this recipe :)
