Lunch

this here be lunch: spelt pesto bread with sesame pumpkin hummus [recipe at the end of this entry, modified from another hummus], and organic frisée. mouth-gasm!
I had to finish up the pumpkin from making bread and baked ziti [V-con, sans crumbs] so I thought I’d simply throw it in a hummus. there you have it.

Coco(a)nut Loaf

Coco(a)nut Loaf adapted from the Chocolate Raspberry Swirl muffins from Damn Tasty Vegan. I needed to work on using soy creamer, vanilla soy yogurt, as well as shredded coconut, so I baked this in an 8-inch loaf for one hour, simply nixing the preserves and chopped chocolate while adding 1 cup of shredded coconut instead.

absolutely delicious. even for breakfast, from what mom tells me. gee, I wonder where I get that sweet tooth from?

last but not least:

White Chocolate Chip Brownie

White Chocolate Chip Brownies, adapted from My Sweet Vegan’s Crumb-Topped Brownies. I nixed the crumbs [yes, I know: one of the main reason why Hannah's brownies are the bestest], the coffee powder, used vanilla soy yogurt instead and threw in white chocolate chips for good measure.

finally, the sesame pumpkin hummus recipe…

15 oz can chickpeas, drained & rinsed
3/4 cup canned pumpkin
juice of a large lemon
2 big garlic cloves, pressed
1 T sesame oil
freshly ground white pepper, to taste
pinch red pepper flakes, optional

place all ingredients in your food processor, scraping sides often, until the hummus is nice and smooth.

    I wish I had some brownies right now, just finished the last bit of mine… and I have to remember that recipe for when I have leftover pumpkin again. I’m sure it would be great in that hummus!

    Oh shoot! That hummus recipe looks awesome. I have a plastic container in my fridge filled with pumpkin that is just about ready to pop some mold… gah, if only I had some chickpeas I could make your hummy-us!
