Of biscuits and bread.

Sour Cream Biscuits, recipe taken from eat me delicious but adapted a touch, as I wanted my husband to be able to partake [nut-hater!] and wanted them to have some whole wheat flour in there somewhere.
I prepared the dry ingredients with the margarine in one huge bowl, the sour cream and milk in a smaller one and placed both bowls in the freezer until I was ready to start working on the dough.
I only pre-heated my oven to 425F until I was ready to throw the baking sheets in, then lowered it to 400F because as I mentioned before, said oven is a big brat. I baked the first sheet for 14 minutes [a little too golden], the second one for 12: just perfect!
since I baked the ’scuits in two times, I placed the second baking sheet in the freezer too while the other one baked. the results? the second batch was even better than the first, when it comes to fluffiness and rise.
I got 12 biscuits out of the recipe, indeed…
1 cup all purpose flour
1 cup whole wheat pastry flour
1 T baking powder
1/2 t sea salt
1/4 t baking soda
1/4 cup packed light brown sugar
5 T cold vegan margarine, cut into pieces
1/2 cup cold vegan sour cream
1/4 cold full-fat soy milk or other fatty milk alternative [coconut might work well, I'll have to try!]
