Molasses Spelt Bread Rolls
March 12, 2008 at 5:30 pm | In Uncategorized |the molasses flavor is there, but rather subtly so. I think I’m hooked on the softness/moistness that spelt flour gives to fresh bread.
I don’t do the yeast-proofing thing because I love to live dangerously. or the reason simply is that I buy yeast often enough for it to be reliable, whatever. feel free to go proof-crazy if you’re a wuss though, by simply placing the molasses and warm water in a bowl, pouring the yeast on top of it and letting it all sit until the yeast starts throwing a party/foaming. then you can follow the rest of the instructions, no worries.
makes 4 big rolls
3/4 cup warm water
1 T canola oil
1 T blackstrap molasses
2 1/3 cup light spelt flour [might need more if the dough is too wet/sticky!]
1/4 cup vital wheat gluten
1 t fine sea salt
1 t bread machine or instant yeast, works with active dry yeast too but you will need a second rising time
in a large bowl, whisk together the water, oil, and molasses.
in a separate bowl, whisk together the flour, gluten, salt, and yeast.
throw wet ingredients into dry ingredients and stir with a wooden spoon until you can stir no more, and start using your hands.
place dough onto clean, lightly floured surface and start kneading for 5-10 minutes until the dough is smooth, pliable and not too sticky.
shape dough into a ball, and place it in a bowl covered with a very fine coat of oil, swirl your ball into oil to have it just covered with a film of it to avoid dryness during rise.
cover bowl with plastic wrap or lid, place in a draft-free, warm area for at least one hour, or until doubled in size.
in the meantime, line a baking sheet with a Silpat or parchment paper. preheat your oven to 375F.
punch your dough down with your knuckles, place it onto a clean surface and cut it into four equal pieces. shape pieces into balls, flatten them a little if you want to go for a Simon LeBun look. har-har! ahem.
if you used active dry yeast, let your dough rise for another 45 minutes, covered with plastic wrap. if not, you can already put your rolls to bake in the oven once it’s reached its peak temperature, for about 15 minutes or until the rolls are a beautiful golden brown color, sound hollow when tapped at the bottom, and are at 200F in the center when measured with an instant-read thermometer, if you have one. I often check the rolls and if they only fulfill the first two “conditions”, I turn off the oven and place them back in for another 5 minutes until they reach the proper temp.
let cool on a rack before enjoying.
in other news, I went a little nuts at Grocery Outlet when I saw the Earth Balance was sold for $1.49 each.
you can’t blame me, can you?
and finally, a little Pineapple Pomegranate-Glazed Tempeh action, along with a V-con-inspired stir-fry, including wild rice, green peas, pineapple chunks, braised radicchio, and roasted cashew nuts.
I simply whipped up a sauce made of pomegranate-infused red wine vinegar, agave nectar, pineapple juice, and coarse sea salt, poured it on top of the pan-fried tempeh, as well as on the veggies/rice while they were cooking.
I be quiet now!

I much prefer the taste of spelt-based bread now that I’ve been eating it (and no wheat) for eight years. These rolls look great, and I love the fact that you offer recipes for relatively small amounts–if I bake a whole batch of stuff, then the two of us in the house end up eating far too many of any one thing!

I’ve been reading and enjoying your blog for some time. Just started laughing at this post because I did the same thing as you when I saw the Earth Balance at Grocery Outlet (in Berkeley). So happy I am not the only one! GO is seriously addictive — I just got Spectrum flax oil for 99 cents and always load up on Wildwood yogurts and tofu when they have them. Good thing I read your blog so I’ll get some more ideas for using all the EB :-)

Mmm, that tempeh looks delicious! As does the bread (as usual!), I love molasses (even if the taste is subtle) and I’ve yet to bake bread with spelt yet so I’ll have to give these a try!

Yum–thanks so much for the spelt bread roll recipe! I have been on a spelt kick lately…and my mother who cannot eat wheat is coming to visit soon, so I will be making these for sure! I will have to make them soon…just to practice and taste test them before she comes–you know, just to make sure they are going to turn out okay (I’ll make up any reason to try one of your fabulous recipes!!)…

Oh man. I do the same ting. I love love Grocery Outlet. I buy my soymilk there too when they have it!
Unfortunately I have a MAJOR big time aversion to molasses, but I would still TRY these if someone else made them… just out of curiosity. Even the “mild” flavor is still too much but I keep trying to lke the stuff.
