Soft Chocolate Balsamic Cookies

Chocolate Balsamic Soft Cookies

makes 7 deliciously soft cookies…

1/4 cup dark chocolate chunks
2 T coconut cream
1 t balsamic vinegar
1/4 cup light brown sugar, packed
1 t pure vanilla extract
2 T unsweetened cocoa powder
1/3 cup whole wheat pastry flour
1/2 t baking powder
1/4 t sea salt
1 t Ener-g egg replacer powder, no water

preheat oven to 350F, prepare a baking sheet with Silpat or parchment paper.

place chocolate in microwave-safe bowl, have it melt carefully by checking and stirring often to be sure it doesn’t burn. set aside and let cool.
in your stand mixer, cream together cooled down melted chocolate, coconut cream, vinegar, brown sugar, and vanilla.
add cocoa powder, flour, baking powder, salt, and egg replacer. stir until well combined, scraping sides of the bowl with spatula to be sure everything’s combined.

place walnut-sized scoops of dough onto baking sheet, flatten a little: the cookies will spread out a little but not much. bake for 9 minutes, let sit on baking sheet for 4 minutes and carefully place on rack to cool completely.

    Sounds delicious. I bet the balsamic gives a nice kick. You should try it with raspberry balsamic vinegar, I’ve used that stuff by itself on salads and it’s deadly! You’re certainly excited about this coconut cream stuff!

    How? HOW do you come up with these endlessly fascinating combinations? You are a creative genius. I really want these cookies. By coconut cream do you mean skimming the solid stuff from the top of coconut milk?

    bah! I just saw a recipe for balsamic chocolate truffles and that’s how it came to mind, is all, don’t flatter me bazu, it might go to my head! ;p
    I mean bona fide coconut cream but scooping it up from coconut milk MIGHT work too. having seen both, I’d still say the coconut cream is thicker/fattier than the top of a coconut milk can though…
