Invasion of the Coconut Cream Monsters

I found some of the stuff at the aptly named Asia Market which I finally visited for the first time last week, so of course I just had to try V-con’s ice cream recipes: they’re fabulous! I made a banana/chocolate batch and am in the process of making a coffee/chocolate one by crushing 1 T of instant coffee granules and throwing in a generous amount of finely grated dark chocolate…
as a result, I am now covered with tons of coconut cream leftovers.
so far, I’ve made coconut red rice, used some in chocolate balsamic cookies, and in the bread pictured up there underneath the powdered sugar and other Fronch goodness.
I think I’ll post all these recipes eventually, but my brain is too…how to put it? forked up right now to think straight. no particular reason for this, just a lot going on, is all.
being a big beer lover, I had to make Joanna’s Beer Brats, but by baking them as the usual Seitan O’Greatness. I replaced the 1 cup of broth by 1 T of water, and baked the (4) sausages at 325F in my counter top oven for 75 minutes. mmm, perfect beer-y seitan goodness.

Celine, your pictures are getting more beautiful every day. And then even more! And please, let the coconut monster come over to my house, too. Oh, wait it was here and left the Coconut Loaf. I served it to P. and a friend of his and the really loved it.
