Pumpernickel Rolls from Hell

these rolls gave me a lot of trouble, so I’m not posting the recipe just yet even though they are tasty: there’s room for improvement, dammit.

in other news, guess who ordered 10 pounds of vital wheat gluten and 10 pounds of nooch? yeah.
hooray for Bulk Foods, I guess.
but hey, I’m cheap and wanted to benefit from the free shipping offer, what can I say?
I wish I knew someone in town who’d be interested in sharing the loot/cost: even though I use the stuff a lot, it’s still gonna take me forever to be done with it all.

finally, guess who dropped their camera when attempting to put it safely away? one. of. those. days.
does this entry make me look grumpy? GOOD. nah, it’s not that bad really. I had good food to eat to make up for all the rest: it’s the little things, right?

  2. Don’t be grumpy, those still look quite tasty! 10 lbs of each though? That’s quite a bit, especially for the wheat gluten. How often do you use that and how much of it? I’d love some recipes that contain a large of amount of wheat gluten because it contains mostly protein instead of carbs. I’ve messed around with it in baking a bit, adding about 1T per cup of whole wheat flour, but what happens if I add more, does it rise more? Get chewier? Both good qualities but I’m unsure.

  3. Looks like someone needs a nap! Ha ha, just kidding! Those bratty rolls do look tasty though. I too have been a victim of cameras *jumping* (don’t let them make you think otherwise!) out of your grasp…those things are more durable than you’d think though!

    PS- I went to the store that had PB & Co here and they had the spicy one, cinnamon raisin swirl and the dark chocolate. Not a single jar of the white chocolate! Boo. Someday white chocolate peanut butter someday…

    and Nick, I use a lot of gluten for breads but also to make seitan from scratch. check out these various recipes you will love, I’m sure.

    and Mihl, I will have to try your pumpernickel to fight my pumpernickel cravings. although we find excellent, european-like already-sliced ‘nickel over here made with very few ingredients, but it’s of course even more gratifying when homemade.

  6. Oh my gosh, Celine! I’m totally bookmarking that bulk foods website! Did you know that my roomie makes cookies and/or bread like 3-4 times a week? And she only buys flour in 5 pound bags?? It’s damn silly!
    Once we move out of here and have a big more storage space, we’re totally putting in a bulk foods order. HA!

  9. That looks so good! I miss pumpernickel. I never bake with it because I am the only one here that likes it! Sometimes that is a good thing, but I would feel way too guilty if I had to eat all of what I would bake with it!

    I know how you feel about the camera. I am sorry to hear that. I thought I was being careful a few months ago and dropped mine right on the lens. I felt really bad because my husband uses it for work! Thank goodness for warranties!
