Wheat Germ Raisin Pancakes
April 4, 2008 at 5:39 pm | In Uncategorized |one Bon Appétit magazine cover kept on taunting me with its beautiful pancake picture, so I couldn’t resist the urge to make some for myself today.
and since I have been baking stuff that might not necessarily be called health food lately, I decided to prepare something my inner hippie would dance the polka for. yay?
makes 6 medium pancakes:
1 cup light spelt flour [spooned and leveled]
2 T raw wheat germ
2 t baking powder
pinch sea salt
1/2 t ground cinnamon
1/2 cup prune juice [yeah, really]
3-4 T unsweetened soy milk [or your favorite milk alternative]
1 t grapeseed oil [or your favorite mild-tasting oil]
3 T raisins [if you cannot find plump and juicy raisins, simply let them soak in hot water for 10 minutes to bring them back to life, then drain them.]
in a large bowl, whisk together flour, wheat germ, baking powder, salt, and cinnamon.
mix in raisins.
add prune juice, oil, stirring well and adding milk until the batter is not as thick as a muffin batter, but also not too liquid. be careful to not overmix since you don’t want to eat bricks.
preheat a pan greased with non-stick cooking spray. place a little under 1/4 cup worth of batter once the pan is warm enough, spreading it with the back of a spoon. let cook until bubbles appear in the center of the pancake, flip over and let cook for another 2 minutes or until golden brown. keep on doing it until you run out of batter, adding a few droplets of oil in between each pancake so that you don’t get any sticking drama.
serve with maple syrup.

that stack is just about the perfect height for my tastes. of course, i would require a much larger puddle of maple syrup, but to each her own. looks great! :)

Awesome sounding pancakes! I love the pictures you take, the detail is incredible. I need to start paying more attention to the photos, they really make the food more appetizing. I think I need a better camera or at least better techniques.

ha! the pancakes weren’t to be eaten right there and then, a. grace, that’s why I didn’t overdo it with the syrup. I actually ended up eating them sans syrup at all and they were perfect that way too, matter of fact.
