Spice Cookies

they tickle the tongue a little, because they’re evil like that.

I can totally see them used as cookies for sandwiches, with perhaps some lemon buttercream frosting in the middle. or maybe a simple lemon drizzle on top.
you know where to look for the perfect buttercream frosting [vegan cupcakes take over the world, anyone?] and for the icing, simply stir (vigorously, gotta slay those lumps!) 1 cup icing/powdered sugar with a little freshly squeezed lemon juice at a time and eventually some zest, until the icing sticks to the back of a spoon.

for 7 medium to large cookies

5 T (Earth Balance buttery spread is what I used) margarine
1/3 cup turbinado sugar
1/2 T blackstrap molasses [any kind works well]
1 t Ener-g egg replacer powder [no water]
3/4 cup whole wheat pastry flour [spooned and leveled]
1/4 t baking soda
1/4 t baking powder
pinch sea salt
2 t pain d’épices spice mix [or 1 t cinnamon, 1/4 t ground cloves, 1/4 t ground cardamom, 1/2 t allspice. you could also simply make your own mix of favorite spices, for a total of 2 t...]
1/4 t ground nutmeg
1/2 t ground ginger
2 T chopped crystallized ginger (optional)
about 2 T sugar in the raw for decoration (optional)

preheat oven to 350F. prepare baking sheet with Silpat or parchment paper.

in your stand mixer bowl, cream together margarine and sugar. add molasses, mix until blended.
in a separate medium bowl, sift together egg replacer powder, flour, baking soda, baking powder, salt, and spices. add to wet ingredients, combine well. add crystallized ginger, if using.
scoop about 2 T of dough, to make 7 cookies in all. flatten them a bit as they don’t spread much while baking. sprinkle sugar in the raw on top, if using.
bake for 10 minutes for chewy tender cookies, 12 for crispier cookies.
leave on baking sheet for at least 10 minutes before attempting to remove.
let cool on rack completely before storing.
