Making Mountains out of Molehills

or rather, turning a “meh” into an “oh yeeeeah!”.
see, the white chocolate filling I made for the other day’s Homemade Oreo Cookies turned out to be a bit too thin after a few days when stirred again to be used as said filling.
so I grabbed some frozen Cocoa-Nut Quick Bread [except it was a different batch that I made sans coconut], and poured some of that white chocolate, uhm, sauce on top.
I also whisked some blackberry preserves and topped it all up with it. et voilĂ !
I’m irked that the white chocolate experiment didn’t quite pan out, but I’ll try again whenever I get the chance.

Take whatever time it takes to write out the recipe! I’d love to have it, but don’t feel rushed. in the meantime, we can enjoy the pictures :) Too bad the chocolate filling didn’t turn out the way you wanted it to, but I do like the solution that you came up with…

Excellent recipes. The cake looks delicious but I really like the look of the smoked ricotta and corn pie. It’s not made with eggs, right? It looks like it would be a good quiche for sure. How exactly do you smoke ricotta? I’m hungry!

to smoke the ricotta, you roll it up, grab a lighter…oh no wait.

Ooh, nice use of your leftover filling. The quick bread looks very tasty for teatime, or breakfast, or you know, whenever. :-) And the Smoked Ricotta Corn Pie–I almost don’t need directions, I think all I need is to look at that photo for a good long while. Perfect brunch fare… Yum!

That’s an awesome corn pie! At first I thought it had eggs, then I was like “oh wait, it’s a tasty vegan recipe!” hehe. I love love cornbread, so I imagine I’d love this too! Again, the picture is simple edible!
Oh, wanted to share this with you: I went to my favorite vegan bakery again last night with my hubby and had some tasty, tasty oatscreme - ice cream made from oats. You’ve probably already heard of it (have you tasted this stuff? It’s great), but it’s fairly new to me. I am literally addicted to it now, though; ever since I had the gallbladder removed about a year ago, I haven’t been able to handle ice cream, but with oatscreme around - I definitely don’t miss it! :)

Sophie: ouch! you had your gallbladder removed, eh? I just read about it on your “about” page, you poor thing. I think my MIL had hers removed not too long ago either, but I don’t know much about what happens when that has to be done since we’re not too chatty together with her.
anyway, I’ve never tried the oatscreme because I live in an ugly town that has next to nothing fun to do in it. I’ll be sure to try it whenever I get the chance since you recommend it! and I hope you get endless portions of it because hell, you deserve a lot of sweetness after having had surgery!

Wow! Amazing and wonderful baking! Too bad I have an intolerance to soy… I still trying to find a substitute so I could enjoy tofu etc. But anyway, your recipes look so yummy!
