Banana Pecan Barley Pudding

Banana Pecan Barley Pudding, adapted from Eat, Drink & Be Vegan’s which uses brown rice instead of pearl barley.

forgive the sudden silence from this usually one-post-a-day-at-least type o’gal, but I’m currently in the process of making a few personal changes, and that includes the food aspect of it too. that left me no time for taking food pictures or pretty much anything else, really.

I am:

- switching from a 3-mugs-of-coffee-a-day habit to only 1 for breakfast. replacing the extra 2 with non-herbal tea, which I suppose isn’t totally nixing the caffeine, but that’s not the reason why I’m doing it anyway. I should say I’m giving this another try, since it isn’t the first time I make such an attempt.

- hooked on eating bananas: going from finding them tolerable at best, I now want at least one of these things a day. the riper, the better.

- also incapable of resisting the sudden attraction to oats. coming up with insane ideas for added flavor to my oatmeal —> coconut milk + cardamom + rose water + pistachios. oh. YEAH!
thinking of gingerbread too, and maybe even rum-raisin. ooh, matcha + rosewater! the possibilities? they’re endless, just like with pretty much anything related to food. I love it.

that brings me to the idea of not having Luna bars for breakfast anymore, but going for the filling and satisfying bowl of oatmeal a lot of you are so fond of.
I’m a bit reluctant because that also means losing the vitamin boost Luna bars have, and considering I don’t take anything outside of the food I eat…I’m a bit unsure.

anyway, I’m thinking that with the amount of [often healthy, contrary to what one might think] baking I do, it would be wiser to go for the less-processed, or at least made-by-me foods instead of things that are overly sweetened and not necessarily packed with the nutrients my body seems to crave these days.

Granola Bread Roll

I’ve been on a baking/cooking frenzy these past few days: cornmeal muffin tops (sans white chocolate chips), best pumpkin muffins from VWAV, adapted black bean brownies (I love them so!), adapted fudgy brownies from My Sweet Vegan, pumpkin rolls & almond filling with the pumpkin leftover from making muffins, red lentil-miso balls adapted from The Everday Vegan, white bean ratatouille adapted from Vive Le Vegan, red wine & maple-glazed carrots. and I think…that’s it? whew.

oh and, quiche lovers? get a load of VT’s deep-dish sun-dried tomato quiche. mamma mia!
so making this as soon as…the fridge and freezer are a bit less packed.

  1. I also love oatmeal! I could eat that all the time… Contrarily to you, I like to eat my bananas when they are green and crunchy!

  2. Celine, this makes me so happy!!! First of all, I DO eat bananas every single day; and I eat oatmeal about 5 days a week. Luna bars are NOT enough for breakfast - and they’re not as wholesome as a good ol’ bowl of stick-to-your-ribs oats. Kudos!!

    By the way, the Banana Pecan Barley Pudding looks wonderful; and that sun-dried tomato quiche SOUNDS wonderful! :0)

  3. Liz: I technically don’t eat just a luna bar, but since I spread my meals over the course of the day…I guess I kind of am. but all in all, it’s a piece of fruit [apple or banana] and a glass of unsweetened soy milk that completes the whole breakfast. :)
    I can’t wait to switch to oatmeal or other home-baked goodies, though. I think I’m kind of bored of the Lunas to tell the truth.
    q for you: what’s your favorite way of eating oatmeal? quick-cooking, old-fashioned, steel-cut? flavors? could I ask more questions??

    Rosa: meep! I shuddered thinking about the green banana you like to eat. to each their own, right? I know a lot of people can’t stand to see spots on the skin, so that’s funny.

  4. Banana Pecan Barley Pudding - some of my favorite things, all in one bowl. That sounds delicious and looks yummy, so I will definitely have to give it a try!!

    That quiche…THAT QUICHE!! I printed the recipe; can’t wait to try it - thanks for posting the link to it!

    I hear you on cutting back on coffee,;I drink about 4 espressos a day and really want to cut it back to 1 espresso each week and sub tea for every other day. So yay! for you for cutting back!!

  5. *jumps in conversation* Steel-cut’s the best, Celine! I used to have a bowl every morning then I got on my Ezekiel English muffin kick, the oatmeal returned to my breakfast table this morning though! I always have it with sliced banana, cinnamon, nutmeg and soymilk. Yum.

    I’m very particular about my bananas, they have to be *just* ripe. Not under or over. NO spots. I’ll eat it anyway though, grudgingly so.

  6. Whoa, since when do you like bananas? I thought in your black bean brownies post you couldn’t stand them! Oatmeal sounds good except for the rose water…I had a bad experience with a rose flavored toothpaste from Russia…That “pudding” sounds intense, I suppose it’s like a rice pudding type of thing? but not very creamy? Looks more like a healthy side dish to perhaps a sweet-ish meat dish.

  7. Congrats on the new and healthier changes! And really, steel-cut oats are so nutritious (vitamins, minerals, fibre, protein. . . . ), they are giving you good competition for that Luna bar–and all whole, real food! Your bread also sounds wonderful.

  8. I do eat just a Luna bar for breakfast because my tummy doesn’t like a lot of food in the morning. Lunch is generally my biggest meal of the day. I drink 16-20 oz. of water on the way to work, then a mug of unsweetened green tea when I get to work, then I eat my Luna bar around 9:30. Just like you, I like to get my nutrients from food and don’t take supplements. The Lunas give me the vitamins and minerals I need. So, I’m with you on that! I love oatmeal, too, but usually eat it for dinner or a later breakfast on the weekends. Good luck with all your changes. I’ll be rooting for you!

  11. I didn’t like bananas in things, Nick, on their own, they were always ok to me. :)
    and meep! the pudding is definitely not a meat side dish. not only because I don’t eat meat, but also because it’s way sweetened. more of a dessert or breakfast item, for sure.

    I wonder if they have those Ezekiel muffin things here, Ash. if yes, I’ll give it a go to see what you’re talking about!
    I have a big fondness for steel-cut oats too, but want to give a try to the other kinds to be sure of the one I love best. of course, the advantage of quick-cooking oats is that they’re…fairly quick when in a hurry to eat, which is always good. I like that the steel-cut ones are more packed with nutrients and other goodies, though. either way it’s a win-win situation with oats. oats for president! who’s with me?
    (I swear I am not drunk…)

    4 espressos a day, Ashley Nicole? yikes! do you manage to sleep at all or do you run around the place all day long? kudos to you for wanting a change too! I hope you won’t experience any sort of painful withdrawal. keep me posted?

  15. I am on the oatmeal wagon too. As you know people over here in G. don’t go for hot cereals. What can I say, veganism convinced me and now I find a bowl of oatmeal much more satisfieing than a bowl of müesli. Okay, it depends.
    And bananas is such a thing, too. I used to eat them ONLY half green and I didn’t like them in smoothies, cakes and stuff and now I do. P. is always making fund of it because I was such a hater and now have a sip from his cherry-banana juice all the time.
