HodgePodge O’Flours Bread

for a 1 1/2 pound loaf, about 12 slices:
1 1/4 cup pure water
2 T extra virgin olive oil
2 T agave nectar
1 t maple extract
1 cup bread flour + more if needed when kneading
1 cup white whole wheat flour
1/2 cup dark rye flour
1/2 cup light spelt flour
3 T wheat germ
4 t vital wheat gluten
2 T soy milk powder
1 1/2 t sea salt
2 t bread machine yeast or quick-rise
in a large bowl, mix together all ingredients with a wooden spoon. start using your hands once it gets too tough to use the spoon.
place dough on a lightly floured surface. add 1 T extra flour at a time if the dough is too wet. fold the sides of the dough in towards the center, gently, until the dough is smooth and soft. it will be rather sticky and wet, but it’s ok.
lightly oil the sides and bottom of a large bowl, swirl your dough in it and cover. let rise for 90 minutes or until doubled in size.
grease an 8-inch bread loaf pan with oil, butter, or non-stick cooking spray.
place dough on your counter, punch it down. roll it out into a rectangle (about 10 x 15 inches) and roll it up tightly like you would a Swiss roll. place into the prepared loaf pan, push it down gently with your knuckles. cover with plastic wrap, let rise for another hour until it is about 1-2 inches above the pan.
approximately 20 minutes before dough is ready, preheat oven to 375F.
remove plastic wrap, place in the oven and bake for 30-35 minutes, until an instant-read thermometer finds your loaf to be at 200F in its center.
remove from pan, let cool completely before slicing.

I don’t have/want to cut my caffeine and still I want this bread! By the way, next time you visit good old Switzerland I’ll have some truffles ready to send!

Mihl! you’re so sweet. well then keep in mind that the next time I’m in Europe, a package [of American goodies] will magically find its way to you too. :)
and I’m ashamed of myself, because I should have thought of it the last time I was there already!
Ngoc: it’s just…part of the rest of the handle. the cup gets kinda hot so it keeps it cool to have that thing around.
Melisser: hooray, bread machine! this one doesn’t need it though, ha! what wonderful timing I have. ;p
Silvia: no breakfast for you? how horrible! I’m a monster if I don’t get to eat a little something before getting started with my day.

Might tasty looking Celine! I’m always looking for good whole grain bread recipes, and your pictures always make them look more appetizing. However, you captured my heart with the spread of peanut butter on top =)

It feels so delicious.

Celine, your bread looks so perfect shaped and what a gorgeous photo, too. Sounds like a delicious loaf with the hodge podge o’ flours. Just lovely!
