don’t tell Chaz, but I’m having an affair…with my toaster oven!
in an effort to not be too energy-greedy (hello, Earth Day!) when using the good old, huge-butted oven, so infuriatingly and unstrategically placed right next to the fridge, I bought a set of toaster oven bakeware and am in the process of making baked goods in its smaller sized counterpart.
so far? so good! I baked a tiny batch of cayenne pepper crackers (based on the blahblahblah…) and they came out just as tasty and well baked as when prepared in the, uhm, normal oven.
ingredients for these crackers, M.O. = same as usual:
1 cup light spelt flour [spooned and leveled]
1/3 cup nutritional yeast
1/4-1/2 t cayenne pepper [amount depends on how nuts you are]
1 scant t coarse sea salt
2 T peanut oil
as much pure water as needed for it to gather into a piece of dough, over 1/4 cup
if I weren’t a big tree-hugging hippie, I’d totally carve a “Celine ♥ T.O., forever” in a tree trunk.

Ou, I don’t have a toaster oven, but I’m going to try and make these. I think they’d go well with lots of spicy dips. *yum*

Actually I use a lot my oven so I guess I’m not so into this world earth day at all :-P .
But I’m trying to keep it on only once a week to do my bread and other things like muffin or plumcake for the rest of the week…

Great idea, and they look delish. The T.O. is perfect for those smaller batches. . . and clearly doesn’t affect quality!

I just tried it, but I didn’t have any peanut oil on hand so I used 1 T canola oil with 1 T hot sesame oil, they turned out super yummy!

I’m not alone! I am glad I no longer have to hide my love for my toaster oven. I shed a tear when my old one went kaput. It never once burnt a slice of toast.

I’m totally in love with my toaster oven too! It’s such an life saver, especially in summer when it’s too damn hot to use the stove but I want sweet potato fries or baked tofu, or cookies.
Even in summer, one cannot live on salads alone!

We have a toaster oven here, although its mostly use to reheat tempeh rolls.
Unlike you Celine, I have never gotten quite around to trusting the toaster oven enough to pursue an affair ;)

No toaster oven here, but I’m going to try these in my regular oven. I’ve been looking for something else to bake with some spelt flour I have. Great idea - thanks!

Happy earth day! You make me feel bad, I didn’t do anything special today for it. (Though I think just being vegan should count for something!) I LOVE your crackers idea! I really want to make some homemade ones for the first time. Do you have any yummy spice ideas that could replace the cayenne?

Yum! For a second, though, I thought these were little sandwich cookies and I got a little excited that there might be some kind of peanut butter filling inside….but peanut oil, I like it!

ruby red vegan: you can definitely use whatever you prefer! no matter what the flour, the spice, it always comes out well following the different versions I’ve made.
you could use simple black pepper. or thyme, basil, oregano…sun-dried tomatoes even. olives. I could go on and on, so yeah pretty much anything goes!
I’ve even had feedback from people part of garbanzo flour in it.
let me know what you end up trying?
you could definitely turn these into PB cracker sandwiches, Nick. hell, this is making me hungry.

Small batch baking is best in my house, since I’m always making new stuff. I don’t often use the toaster oven to do it, but that’s a really good idea!

Oh, I loooooove this idea! I use my TO whenever possible too, to reduce my “oven guilt.” :) But…TO bakeware? I had not idea such a thing existed! I think I need the muffin pan.

I feel like such a silly bunny for asking… but I was just curious:
Does nutritional yeast go “bad”? I’ve had some in my refrigerator since January, and was just curious if it would be suitable for use. These look divine and I’m dying to make them!

January of this year, Julia? absolutely no problem! it’s pretty much everlasting, that stuff. I wouldn’t let it go for 10 years [not that it would last that long over here anyway!], but the nose test is always the best: if it smells wrong, toss it out! if it smells like bona fide nooch, keep it and enjoy it.
