Gluten-Free PB Cookies

GF PB Cookies

if you haven’t made these yet, you’re missing out. it doesn’t matter if you have to eat gluten-free foods or not, the fact is that they are deliciously chewy, almost fudgy, and most importantly? they hit the spot.
proud owners of My Sweet Vegan, the recipe’s in the book under a different name: Peanut-Plus Cookies.

remaining faithful to my habit of making a normal-sized recipe into a far smaller one, I decided to make only 6 of these cookies, basically quartering the recipe.

a few tips for other fans of small-batches-of-stuff-for-the-win:

- I used Turbinado sugar. not so important, but I’ve already seen it make a difference in some recipes.
- grind the lentils in your coffee grinder. it only takes a minute or so for them to be reduced to a very fine powder.
- considering the tiny amount of potato flakes/milk prep, you don’t want to go for the full minute of nuking, but for 20 seconds tops.
all microwaves are created unequal, so be safe and check after 10 seconds.
fyi, I used unsweetened almond milk, and it worked really well. the potato flakes I use are Barbara’s Instant Mashed Potato flakes.
- I stayed true to my affair and used the TO again. 10 minutes is what I set the timer for.

    I made these not long ago and they were awesome! I’ve never enjoyed lentils so much, and of course you can’t go wrong when peanut butter is involved.

    I’m making these right now! :) I had a bag of red lentils that I was going to make into a lentil loaf this week but when you posted this I headed straight for the kitchen. ha. They’re in the oven and smell delicious.

    I think I used light brown sugar before, atxvegn, and it might have yielded fudgier results, but I’m not sure. it’s been so long! I like the way they came out with Turb, though, and considering it’s a touch healthier…I’ll stick with that one.

    I don’t get it…These sound incredible and all, but how come yours look 10 times better than the original ones? They look like a totally different cookie (and recipe). Although based on another recipe, they’re still modified to your liking. You really should enter these into Peanut Butter Exhibition #1 - Cookies! You’ve got 3 hours left to enter!!!

    I need to make me some of that ice cream, Amy. I’m still hooked on the chocolate/PB once that unfortunately uses either silken ‘fu or soy yogurt, but I’m sure if you find rice yogurt, it’d be a blast to have it like that.
    anyway, I ramble.
    re: commenting. I’m finally getting back into doing that, there was a long period of time where I just didn’t have the courage. too busy + sometimes lazy! your reasons are far more understandable.
