Chickpea Wingz

Behold: the happy union of chickpea cutlets and tempeh wingz (scroll down for recipe).
Chaz loved the wingz part of the latter, but found out he isn’t so keen on tempeh after all, the silly man.

I think I whipped up the whole thing in barely an hour (I had to work in 2 batches each time, as I used the countertop oven), so it’s not killer in the way of prep either.

Simply make a recipe of cutlets, but separate them in walnut-sized nuggets: I got 14 out of it. flatten them on your baking sheet, and bake (at 375F) for 10-15 minutes on one side, 5 on the other.

While they’re busy baking, whip up all the ingredients for the wingz, as well as the sauce.
Follow the instructions and assemble them, once they’re cool enough to handle, then bake (at 400F) for 7 minutes on one side, 3 on the other. dip in sauce, and serve hot.

    Brilliant, I say! I bet I could use the Tempeh Wingz breading and sauce on a shoe or a tin can and think it’s the best meal ever. But it makes much more sense on the chickpea cutlets.

    I also don’t particularly like tempeh. From what I remember, I didn’t like the after taste. I thought it was just me! But that photo is gorgeous and makes me want to try tempeh again! Maybe combined it might taste good. But then tempeh is not available over here. But I sure will buy and try tempeh again if I see them!

    I think I had the idea for this combo a while ago, but you definitely beat me to trying it and the results look delicious! Although I love tempeh so much nowadays that it may be hard to go with the cutlets instead.

    I made these tonight for dinner to make BBQ wingz (with Annie’s new Sweet and Spicy BBQ sauce) and put on a huge dinner sized salad. However, I didn’t have your instructions in front of me and forgot to bake the nuggets before I breaded them. They cooked up just fine with 15 minutes on the first side and about 25 minutes on the second, however; and made a very satisfing dinner.

    Unfortunately, I also made most of them to big, so they went into the fridge and will become BBQ sliders next week, using potato rolls. They will make for great lunches with fourth of July leftovers.
