Peanut Butter Chocolate Chip Cookie Sandwiches with Peanut Butter Chocolate Mousse Filling

because good old peanut butter chocolate chip cookies (as soft and unsatisfying to me as they may be) aren’t decadent enough on their own, they deserve to have my favorite chocolate peanut butter soy yogurt-based mousse added to them?
the answer couldn’t be simpler: hell yes.

update: since several people asked about it, I simply adapted them from here by subbing turbinado sugar for the two sugars in use, as well as 1/4 cup plain, unsweetened soy yogurt for the egg. if you like soft cookies, I suppose you will get a kick out of these.
if I ever make them again, I’ll probably go for the Ener-g egg replacer some people seem to loathe so much: I personally have nothing bad to say about it!

it turns out that they, when used as a frozen sandwich, totally rock my world. I’m serious. could I possibly make up my mind?

the mousse was simply made of 12oz unsweetened plain soy yogurt [vanilla would be great!], 4 T agave nectar, 1 cup semisweet chocolate chips, and a few generous spoonfuls of chunky natural peanut butter. top one of the cookies with some of it, top it off with another cookie, chill in fridge for a few hours and there you have it: a perfectly sinful dessert to satisfy even the most constipated [not literally...I hope] guests you’ll ever have to host.

Crunchy Carob Almond Granola

a bit less decadent, because I can be somewhat of a smaller glutton at times: a crunchy carob almond granola extremely loosely based on Dreena’s Hemp-anola from Eat, Drink & Be Vegan.
don’t ask me what’s in there exactly: I just threw in a little bit of this, a helluva lot of that and there you go: breakfast is baked, then served.

update: ok, you can ask me what’s in there now, ’cause here’s the recipe.

it can sometimes be refreshing to not make something and have a recipe at the end of it, but instead to just busy yourself in the kitchen for the sake of enjoying it. at least that’s what I keep on telling myself today!

  8. I agree! I like experimenting and not having an actual final recipe sometimes. Sometimes you need to just mix a little of this, some of that and then a little more of this to make it work. I did it just the other day, at first feeling bad for not taking tons of pictures and writing down the recipe, but then it felt good to just try something different and undocumented. We’re slaves to the blogs!

  10. I’d say that is the ultimate indulgence cookie:) I think a mousse filling would be preferable in a soft cookie over a hard cookie, yum!
