Cocoa Cookie with Marzipan Layer

I made these into 2 HUGE sandwiches [aka, 4 separated cookies], but don’t be a fool like me: it’s far wiser/prettier to make them into 4 smaller, but still large, sandwiches. also, don’t squish the marzipan as much as I did so that you get more flavor out of each bite.
4 T margarine
4 T sugar in the raw
pinch sea salt [do not use if your margarine is already on the salty side!]
1 t Ener-g egg replacer powder
1/4 t t hazelnut extract [vanilla or chocolate or almond work perfectly well too]
1/2 cup + 1 T all-purpose flour [spoon and level]
1/4 t baking soda
2 T unsweetened cocoa powder
about 2 generous T worth of marzipan, cut in 4
prepare a cookie sheet with parchment paper or Silpat. preheat oven to 350F.
in a large bowl, cream together margarine and sugar. add extract of your choice, egg replacer, and salt [if using].
sift in flour, baking soda, and cocoa. mix until combined.
separate dough into 8 equal pieces. shape into balls, flatten them down to 1/4 inch thickness. shape your marzipan into balls too, flatten down to about 1/2 inch thickness, in smaller discs than the cookie dough.
place one cookie disc on prepared sheet, top with marzipan, add another cookie disc on top. seal edges and flatten cookie sandwich as much as you want them to be as these don’t spread while baking.
repeat with the rest of dough/marzipan discs.
bake for 12-15 minutes: you want the top of the cookies to be set and firm.
let cook on sheet for a couple of minutes before moving to a cooling rack.

Omg you have to stop making and posting about cookies. I am TRYING to lose weight here! Seriously, I’m going to have to take you off my bloglist because everytime take a peek at what you’ve been up to I want to eat all the sugar and fat we have at home.
And marzipan is so good I could eat the huge 2lbs tube I have at home with a spoon. I haven’t yet because I’d feel bad about opening it but if I were to take some out to make these cookies I’d probably end up eating all of it.. yum!

wow, these look incredibly rad. I gotta try these!! I really love marzipan, but don’t use it as often as I should. Currently, I am on a self-imposed cookie moratorium… but when I resume my standard, frenzied cookie eating M.O., I will definitely make these!

I’m afraid I have absolutely no idea how that would work when using an egg, Sharon. I haven’t worked with them in forever, and besides, it adds liquid to the recipe so you’d have to play around with the rest of the ingredients a bit to make up for that.
you could use your favorite cocoa/chocolate cookie recipe and use it to enfold a piece of marzipan like in this recipe, though?
