Vegetarian Times’ Snickerdoodles
May 21, 2008 at 4:56 pm | In recipe |this happens to be my husband’s favorite cookie, so he’s in for a treat today.
the recipe is from the September 07 issue of Vegetarian Times, I’m just offering it scaled down & slightly adapted, for 7 medium cookies.
if you end up with some cinnamon sugar leftover from the recipe like I did, you could always add it to your favorite nut butter for future “tartines” or other treats to be had.
7 T [aka 1/4 cup + 3 T] all purpose flour, scooped and shaken up a bit, leveled
1 T cornstarch
1/4 t baking powder
2 T margarine, softened
2 T granulated sugar
1 T light brown sugar, packed
1 T soy milk [I used unsweetened plain]
1/4 t pure vanilla extract
cinnamon sugar:
simply combine together in a small bowl the following ingredients…
2 T granulated sugar
generous 1/2 T ground cinnamon
preheat oven to 350F. line a cookie sheet with parchment paper or Silpat.
in a medium bowl, sift together flour, cornstarch, baking powder.
in a mixer bowl, cream together margarine and sugar. add soy milk and extract, mix well.
add flour mix to wet ingredients, stir until well combined, scraping the sides with a rubber spatula to make sure nothing gets lost in translation.
divide dough into walnut-sized portions, shape into balls. roll into cinnamon sugar, flatten just a touch [the cookie won't spread much while backing but will flatten down a bit once they're out of the oven], and bake for 9 minutes: the cookies must look dry on the top and lightly brown on the bottom.
remove from cookie sheet and let cool before storing.

I’ve never had a snickerdoodle. Doesn’t seem like nearly enough liquid to bring a batter together, although I suppose the margarine lends itself to that. They sound delicious, I’ll need to go pick up cornstarch. What does the cornstarch do in this case, is it for thickening of the batter?

Those snickerdoodles look very mischievous just sitting there in that little stack. They must be plotting something…perhaps it is “let’s roll over to vegan addict’s office so that she can eat us…”

I’m slightly embarrassed to admit I’ve never tried a Snickerdoodle, even with all my years of baking. These look like a good recipe to introduce myself to them!

Oh merci! This is great- I love snickerdoodles, but haven’t had one since I was just a kid. I have a recipe for one in a vegan cookbook I own, but they turned out horrible- way too much butter sub. I cannot wait to try these. Just love your blog!

I think you’re right Amy: them snickerdoodles are evil, we must fight them off by chewing them good!

i made these yesterday — the tiny batch was perfect! i doubted the liquid amount as nick did, and alas, my batter was a bit wet. but i just dropped them onto the parchment and sprinkled the cinnamon sugar on top. they were still great! :-)

celine, i just made a batch of these for me and my sister! they are SO good - the only thing i would change is adding a little more spice, maybe some nutmeg and the itsy bitsiest bit of ginger. these are also much better than the recipe i tried earlier in the week. i had ‘em today with a glass of soymilk. mmm.

celine, i scooped my flour directly from the bag. i think the culprit, now that i think of it, was my “light” smart balance (all i had!). if i’m not mistaken, some of the fat is replaced with water. i can’t wait to try them again with proper margarine!
