a quick update on the white chocolate lime cookies the winner chose among the three kinds I offered: they are easy to make with spelt, using the same amount you would all-purpose, but lowering the milk alternative [almond, in this case] to one teaspoon, as well as the baking time to about a minute less.
I wanted to snap a new shot of them, but alas. it’s still dark over here, so I just ended up recycling the original pic. I know, I know. I have no shame!

I can’t tell you how thrilled I am! The cold pack is such a good idea because it’s almost 100 degrees here. I’ll let you know when I get my lovely prize - woohoo!

bah, D, terrible news: I could not for the life of me find the cold-pack! I had to ship them out without it, but the white chocolate chips don’t have as big a tendency to melt as “normal” chocolate does, so my fingers are crossed. I recently sent a box of these to someone down in FL, and they got there just fine. apologies, I had edited the post but apparently that didn’t get changed in the feed.
Mihl, I always get up in the middle of the night anyway, I guess I never got used to a different schedule when I moved to the States. ;p

I agree - that photo is too perfect to change it. I am still on the hunt for vegan white chocolate chips. And when I finally find them, this recipe and I are going to have one amazing night together. ;)
