Chickpea Germ Bread Rolls
I love how revolting the title sounds. good thing that the results are anything but revolting, though.
a quick unrelated-to-rolls note to say that:
- if you haven’t made V-con’s Black Bean Burgers yet, you’re missing out on something great.
- My Sweet Vegan’s Banana Muffins are deliciously chewy and perfect for breakfast. ditto previous line.
I know I’m more or less stuck on making rolls at the moment, but I’m still using the countertop oven and I find that baking rolls yields more satisfying results with it than a bona fide loaf-shaped bread would: QED.

for 6 rolls:
1 1/4 cup water
2 T peanut oil
2 T Sucanat
2 T instant coconut milk powder
1 1/2 cup bread flour (spooned and leveled)
1 1/2 cup whole wheat flour (same)
1/2 cup wheat germ
2 T vital wheat gluten
1 cup chickpea flour (add it a little at a time until dough reaches adequate texture)
1 1/2 t fine sea salt
2 t bread machine yeast or rapid-rise yeast
throw all ingredients in your mixer bowl. using the dough hook, knead for about 5 minutes, adding the chickpea flour until the dough isn’t too sticky anymore.
finish kneading by hand, on a clean surface. shape into ball.
coat a large bowl with some oil, turn dough around to lightly coat it with oil too. cover and let rise until doubled in a warm, draft-free place. it may take up to 90 minutes or more, depending on where you live.
20 minutes before dough is done rising, preheat oven to 375F. prepare an 8×8 inch baking pan with non-stick cooking spray.
prepare wash for a shinier crust.
punch down risen dough, divide into 6 equal portions. shape into rolls. place in prepared pan, lightly brush with wash.
bake for 26 minutes or until instant-read thermometer finds the rolls to be at about 195F in the center.
remove from pan immediately, let cool completely before storing.

Another winner (despite its title!). Just a question I’ve been meaning to ask: why is there vital wheat gluten in pretty much every bread recipe? Is it simply because it provides a nicer texture? Since wheat gluten is not my friend, I’m wondering if I could play with the recipes and remove it.

Ricki: I add the VWG for texture indeed, especially useful when a lot of whole wheat flour is involved. you can absolutely do without, but the loaf/rolls might be a touch denser, which is never such a big problem.

it’s really an optional thing, for texture, so don’t worry about simply nixing it!
