Peanut Butter Oat Bars
Non-stick cooking spray
1 cup (235 ml) organic corn syrup
1/4 cup (61 g) unsweetened applesauce
1/2 cup (128 g) crunchy natural peanut butter
1 1/2 cups (117 g) quick-cooking oats
1 cup (116 g) wheat germ
1/3 cup (53 g) raisins
3/4 teaspoon ground cinnamon
Preheat oven to 350°F (180°C, or gas mark 4). Lightly coat an 8-inch (20-cm) square baking pan with non-stick cooking spray.
Combine corn syrup, applesauce, and peanut butter in a small saucepan, until melted and emulsified.
Combine oats, wheat germ, raisins, and cinnamon in a large bowl. Fold wet ingredients into dry, and combine until coated.
Press mixture into the prepared pan, bake for 20 minutes.
Place the pan on a wire rack to cool. Chill in the fridge while still in pan for an easier time slicing into bars.
Yield: 8 bars

This looks like a rather groovy breakfast treat! I do need to make some applesauce…
I hear what you’re saying about the fundage being a bit “serré” :(

I love that you have the wheatgerm in there…it is the unsung hero of the baking world! And the apple sauce too! This is a bar that speaks to my apple wheat germ loving heart!
Thanks for the recipe. I start back to teaching the middle of next week, and could totally get some morning mileage out of these peanuty dudes!

This must be some super food, if it makes you go without coffee. (Which seems like something totally crazy in my little espresso addict’s world:))

Yay! These will be perfect for my backpacking trip this weekend. And I just made my own peanut butter, so even more fun! Are they chewy? Do you think they would survive in a backpack?

Amy: they are chewy, and as long as you wrap them tightly in parchment paper or wax paper, they should behave perfectly. provided you don’t use them as a trampoline, that is.
backpacking sounds like fun! I haven’t done that in far too long.
Michelle: I hear you on the Laras. I broke down and bought cheap Clif bars and Luna bars last week even though I totally overdid it with them in the past, and now I find myself not tempted to have a go at them. why did I even bother purchasing them, I have no clue.
Jessy: you’re too cute for words, with your infectious enthusiasm. I love it.
everyone else: muah!

do you know how terrible it is to read all your wonderful recipes and realize I’m always one or two ingredients short? short meaning I can’t get them in this country (argentina, that is). oh well…. I’ll survive, I guess…

Diann: I only play one on tv. awesome person, that is.
Eliane: I know. it’s all done on purpose. I sure hope you will survive!
Jes: better than 10 cups of coffee, too. it’s been scientifically proven, waiting for the FDA seal and all.

I just told my husband the other day that I wanted to start making homemade granola bars! I made these last night and will cut into them in just a little while! The house smelled so good while they were baking and it took no time to get everything together! Thanks for the recipe…I will post them when I get a pic!

I just made these this afternoon (with the help of my 3-year-old) using a combination of maple and corn syrup. We did manage to wait till they cooled off and the bars were delicious. Thanks for sharing this recipe.
