18.08.2008 PB Oat Bars

These dense, nutty bars are packed with fiber thanks to the use of whole grains, rich in protein with the addition of nut butter, and yet are kept deliciously moist with the applesauce. Woo!

Non-stick cooking spray
1 cup (235 ml) organic corn syrup
1/4 cup (61 g) unsweetened applesauce
1/2 cup (128 g) crunchy natural peanut butter
1 1/2 cups (117 g) quick-cooking oats
1 cup (116 g) wheat germ
1/3 cup (53 g) raisins
3/4 teaspoon ground cinnamon

Preheat oven to 350°F (180°C, or gas mark 4). Lightly coat an 8-inch (20-cm) square baking pan with non-stick cooking spray.
Combine corn syrup, applesauce, and peanut butter in a small saucepan, until melted and emulsified.
Combine oats, wheat germ, raisins, and cinnamon in a large bowl. Fold wet ingredients into dry, and combine until coated.
Press mixture into the prepared pan, bake for 20 minutes.
Place the pan on a wire rack to cool. Chill in the fridge while still in pan for an easier time slicing into bars.

Yield: 8 bars

    I love that you have the wheatgerm in there…it is the unsung hero of the baking world! And the apple sauce too! This is a bar that speaks to my apple wheat germ loving heart!

    Thanks for the recipe. I start back to teaching the middle of next week, and could totally get some morning mileage out of these peanuty dudes!
