18.08.2008 PB Oat Bars

These dense, nutty bars are packed with fiber thanks to the use of whole grains, rich in protein with the addition of nut butter, and yet are kept deliciously moist with the applesauce. Woo!

Non-stick cooking spray
1 cup (235 ml) organic corn syrup
1/4 cup (61 g) unsweetened applesauce
1/2 cup (128 g) crunchy natural peanut butter
1 1/2 cups (117 g) quick-cooking oats
1 cup (116 g) wheat germ
1/3 cup (53 g) raisins
3/4 teaspoon ground cinnamon

Preheat oven to 350°F (180°C, or gas mark 4). Lightly coat an 8-inch (20-cm) square baking pan with non-stick cooking spray.
Combine corn syrup, applesauce, and peanut butter in a small saucepan, until melted and emulsified.
Combine oats, wheat germ, raisins, and cinnamon in a large bowl. Fold wet ingredients into dry, and combine until coated.
Press mixture into the prepared pan, bake for 20 minutes.
Place the pan on a wire rack to cool. Chill in the fridge while still in pan for an easier time slicing into bars.

Yield: 8 bars

    Yay! These will be perfect for my backpacking trip this weekend. And I just made my own peanut butter, so even more fun! Are they chewy? Do you think they would survive in a backpack?

    Amy: they are chewy, and as long as you wrap them tightly in parchment paper or wax paper, they should behave perfectly. provided you don’t use them as a trampoline, that is.
    backpacking sounds like fun! I haven’t done that in far too long.

    Michelle: I hear you on the Laras. I broke down and bought cheap Clif bars and Luna bars last week even though I totally overdid it with them in the past, and now I find myself not tempted to have a go at them. why did I even bother purchasing them, I have no clue.
