Butterscotch Pecan Bars

I sacrificed myself to further disprove the myth that vegan food always = health food…
Best thing? The pecans make it so I don’t even have to share them with the husband.
Butterscotch Pecan Bars Preheat oven to 350°F , coat an 8-inch square pan with non-stick cooking spray.
In a small saucepan, melt:
1/3 cup vegan margarine
Remove from heat. Stir in:
3/4 cups + 2 T SucanatSet aside and let cool a little.
In a large bowl, sift together:1 cup light spelt flour [lightly spoon & level]
1/2 t baking powder
1/8 t baking soda
1/2 t fine sea saltStir in:
1/3 cup pecan bits
In your stand mixer bowl, vigorously whisk together:
1 1/2 t Ener-g egg replacer powder
2 T warm waterAdd cooled down margarine mixture, as well as:
1 t pure vanilla extract
Stir together until well blended.
Add flour mixture, scraping sides once to make sure nothing gets ignored.Pour batter into prepared pan, sprinkle with:
1/3 cup chopped chocolate
Bake for 19 minutes, let cool in pan on top of a cooling rack. Place in fridge or freezer before cutting. As is almost always the case with the baked goods that I prepare, I enjoy these straight from the fridge.
Yield: 8 or however many bars you like

Hi Celine!
These look gorgeous! I can’t wait to try them and I’ll do soon as I “have to” (haha!) bake for my friends at school. I’m glad this recipe doesn’t use butterscotch chips as they aren’t available around here.
Do you think I could replace the Ener-G with my standard egg replacer or gound flaxseeds?

I’m going to double it tonight and use my bakers edge pan. Lets see what happens! I need something for my DH to bring to work, and I don’t like nuts, so I won’t eat too many ;)

your blog freaks me out! i start salivating just looking at all those pictures. And those bagels… sigh. mmmm.
hey, you asked about the Joy of Vegan Baking Brownies- they are sort of half way in bewteen cakey and fudgey. I really like them. I have actually left them in the oven for 20 minutes too long and had absolutely no ill effects. The longer they bake the cakier they get. Definitely worth checking out.

Those are so dark, they are black, just like the “traditional” brownies I used to make! I used to use Sucanat for everything, & I really miss the taste it lends to everything. Thank you for the pleasant reminder & inspiration, not to mention the brownie recipe!

you should see the carob bars I made using Sucanat and that carob powder that turns everything black, destiny. they look like pieces of charcoal, but aren’t burnt at all!

I made these with extra margarine but minus the egg replacer. They cam out pale and tasteless- not at all like your photos!

uhm. the subs you made would do it, EJ. you need some sort of egg replacer to bind the thing, and margarine isn’t going to cut it.
