Peanut Butter Cups
August 29, 2008 at 6:03 pm | In recipe |my husband was exhibiting symptoms of peanut butter cup withdrawal, so I put on my superhero suit apron and came to the rescue.
I started improvising as I went along, only to find out that “my” recipe is 99% similar to the one on VegWeb.
oops! my bad.
I’m posting it anyway, since there’s still that 1% that makes the whole difference. (ahem.)
quick note: be sure to leave your cups in the fridge until ready to eat, as they have a tendency to soften up rather quickly. gotta love summertime…
update: suggested Reese’s peanut butter cups have peanut butter added to the chocolate part, so I’m definitely trying this the next time I make these. I’m thinking 2-3 T to begin with.
update on the update: adding PB directly to the chocolate was a fantastic suggestion! also, the cups taste awesome straight out of the freezer.
for 12 “small” cups:
12 mini cupcake liners
3/4 cup semisweet chocolate chips
1/2 cup creamy natural peanut butter + 2 generous T to add to the melted chocolate
1/4 cup powdered sugar
1/2 t pure vanilla extract
pinch fine sea salt [if your PB is already salted, it's optional to add more]
melt the chips in your microwave, keeping a close eye on them and stirring often to make sure they don’t burn. it should take between 1-2 minutes. add the 2 generous T and stir to incorporate.
give it about 5 minutes to cool down a bit, it’s easier to spread around when not lava-hot.
place a heaping teaspoon of melted chocolate in each mini cupcake liner and spread it all over the place with the back of a spoon. repeat with all 12 liners.
place the chocolate-covered liners onto a plate, into your fridge, to let it all harden.
meanwhile, stir together peanut butter, vanilla, salt, and sugar. if your peanut butter is anything like mine, it should form a sort of paste that you can start kneading to make sure all gets incorporated really well.
the chocolate should be hard by now, so divide peanut butter paste into all 12 liners, pressing down gently to make sure the paste goes everywhere.
top with heaping teaspoon of chocolate [melt it again if needed], spreading carefully so that none of the PB paste can be seen.
chill in fridge for at least one hour, until ready to devour.

Love it! Peanut Butter cups have always been my favorite candy and yet I’ve never made them. It’s probably for the best though. I’d inevitably eat the whole batch.

I love making peanut butter cups! Most of the time I add in some ground flax with the peanut butter mixture. It gives it a slightly more “crumbly” texture, more similar to Reeses peanut butter cups. Plus it’s healthy so you don’t feel so bad when you devour 3 or 4 in one sitting! haha! I also now use a paintbrush for spreading the chocolate into the cups, I have one reserved just for this job.

cool! Looks do-able. One of the kids in the fam just came back from the US with a butt load of Reeses and I really want some. one thing I wanted to add is that if I use a double boiler (ie. a frying pan sitting over a pot of boiling water), I never have to worry about burning my chocolate.

They’re this easy to make? I can’t believe I haven’t done this yet. This is my next project for sure. What creamy natural peanut butter do you use? I would think TJ’s is way too runny to become thick enough to handle just from adding 1/4 cup sugar. Either way these look like the perfect treat, nice work!

I have a real problem following U.S recipes, because as I live in the U.K, I use either metric or imperial measurements, not cups. However… I attempted these peanut butter goodies last night, and it was an absolute treat. One of my partners who doesn’t even like peanut butter ate four of them! Thank you for this, but please spare a thought for those who live outside the U.S/Canada.

made these this evening. took about half an hour, but they were so incredibly easy to make, it felt like only five minutes. i really enjoyed making these…low stress, low maintenance, nothing fancy. i doubled your recipe and made 12 regular-sized cups in foil liners [didn't have any mini ones in the house]. they look incredible and taste even better. super rich. i used ghiradelli 62% chocolate chips and skippy natural creamy peanut butter, because that’s what i always have in the house. thank-you so much for this recipe. i’ll be making these again and again!

Okay, I really have to comment now :-). A colleague spoiled everyone to ferrero rocher and I altruistically gave mine away (I don’t think they’re vegan, are they?) but then I came across this recipe and felt inspired.
So I made the chocolate cups, then instead of peanuts, created a hazelnut butter out of roasted hazelnuts (rub off the skin), a pinch of salt and sugar, blended all together. I added the powdered sugar and vanilla. My chocolate cups were praline sized and I filled them with 1 tsp of the hazelnut-butter goodness, then covered with more chocolate and chilled in the fridge.
I have to say - no ferrero rocher can compete - it was soooooo utterly delicious that I could hardly keep myself from eating them all. The recipe yielded about 25 praline sized cups and wow everyone loved them. They tasted rich and decadent.
Thanks so much for the recipe and the inspiration and please, have a go at the hazelnut version you won’t regret it :-)

Very nice! I used only two ingredients, Dark chocolate chips (melted) and peanut butter (fresh ground peanuts, no added sugar, salt, or flavorings). I used my silicon muffin pan and that worked well. What is nice is that I made only four cups so there is two a piece for hubby and I tonight! Super easy, thank you!

Ive made these a couple times now and if there is any tweaks I would make they would be:
1. Mini isnt the best idea in my opinion. I would use the regular width type liners but the shorter versions. The actual mini liners make a real mess and are harder to spread.
2. I used the Reese’s peanut butter. Enough said :)
3. Defiantly add some peanut butter with your chocolate, the texture seems to be better.
These are minor tweaks but the recipe is perfectly delicious.

i have made these SOOOOOOOOOOOO man times. the recipe is great. i use about twice the amount of chocolate you do but that’s a personal problem. i can’t imagine not making them mini though, they’re so extra rich. i know this will be a holiday treat for some family members because it really doesn’t get much easier than this. KUDOS FOR CELINE. SHE WINS AT LIFE. :)
