Chocolate Breakfast Cake

I’m really enjoying eating this for breakfast, lately. it’s rather healthy as far as chocolate things go, and makes waking up early just a touch more bearable.
for the record, I found it even tastier the next day. and “tastierer” after a passage in the freezer.
(I don’t eat it frozen, though!)
the recipe’s begging to be played with, which I will do in the near future.
Chocolate Breakfast Cake 1 1/4 cups whole wheat pastry flour
1/2 cup brown rice flour
1/4 cup cocoa powder
2 teaspoons baking powder
1/4 teaspoon fine sea salt
1/2 teaspoon ground cinnamon
heaping 1/4 cup Sucanat
1 medium, ripe banana, mashed
1/4 cup oil
1 cup unsweetened plain almond milk
2 tablespoons blackstrap molasses
1/2 cup semisweet chocolate chipsPreheat oven to 350°F , prepare an 8-inch square pan with non-stick cooking spray.
In a large bowl, sift flours, cocoa, baking powder, and cinnamon. Whisk in Sucanat.
In a medium bowl, whisk together banana, oil, milk, and molasses.Combine wet and dry preps without overmixing, fold in chocolate chips.
Pour batter into prepared pan and bake for 20-25 minutes, or until a toothpick comes out clean.
Leave in pan for about 30 minutes, then remove cake from pan, place it on a cooling rack and let cool completely before slicing.Yield: 6 to 8 servings

I love the idea of chocolate for breakfast. I mean, talk about a great motivator for waking up… With my morning cup of jo, I might actuallyl ove my mornings more now. I am a novice at the alternative-baking so I’m a little lost here. What is Sucanat? And where would I get that?

Amanda: you can get Sucanat here, but since it comes in a large batch, you might want to give it a try first. if you have a Whole Foods nearby, I’m sure you can find it there. our local (well-stocked) Albertson’s also carries it.
Sucanat is basically an organic, slightly healthier brown sugar, since it retains some of its nutrients.

Quite a healthy breakfast indeed! Chocolate always gets a bad rap, but cocoa powder is a nutrition powerhouse, at least in my mind. I use it wherever I can. Those melted chocolate chips just seal the deal, congrats on getting away with chocolate for breakfast.

Yes to unsweetened almond milk! It is my absolute favorite “milk” – but only the one from Blue Diamond. I can’t wait to try this recipe!
