Pumpkin Oatmeal Sticky Biscuits

eaten straight from the fridge. I can’t even…so I won’t.

Pumpkin Oatmeal Sticky Biscuits

preheat oven to 375°F. prepare 8-inch square pan with non-stick cooking spray. be sure to use a pan that’s got at least 2-inch high edges, as the syrup will bubble up while baking.

2 cups light spelt flour, spooned and leveled
1/2 cup quick-cooking oats
1 tablespoon baking powder
3/4 teaspoon fine sea salt

sift together in a large bowl. place in the freezer while preparing the rest.

3/4 cup canned pumpkin
1/2 cup unsweetened soy milk *or whatever you have)
1/4 cup walnut or other oil
1 tablespoon pure maple syrup

whisk together in a medium bowl. place in fridge while preparing the rest.

1/2 cup Sucanat
1/3 cup raisins
1 teaspoon ground cinnamon
1 teaspoon pure vanilla extract

combine first 3 together in a small bowl. add vanilla and combine with your fingers.

1/3 cup Sucanat
1/4 cup vegan margarine
1/4 cup dark corn syrup

place in medium saucepan. on medium heat, whisk together until melted & syrup bubbles around the edges of the saucepan.
remove from heat. pour into prepared pan, set aside.

grab flour mixture & pumpkin preparation out of the freezer and fridge, respectively.
combine with a fork, try to avoid working it too much.

place dough onto a Silpat or a piece of parchment paper. roll it out into a rectangle, to about 1/2-inch thickness.
spread raisin mixture on top, leaving a little space around the edges.
roll it up, cinnamon-roll style.
cut into 8 equal portions, patting them down a bit if needed to shape.
place all of them “face” down into the pan.

bake for 30 minutes, turn off the oven, leave biscuits in for another 5 minutes.
remove from oven, leave it all alone for 1 minute.
armed with gloves, grab a platter and turn pan upside down to remove biscuits from it.
leave on platter for a few minutes, to let the syrup thicken up, place on cooling rack so that the biscuits don’t get soggy.

enjoy…I personally prefer eating them from the fridge, but no matter what: let them sit for at least an hour so that the syrup does its thing before attempting to eat.

    I am a bit dyslexic and as I read your new little blurb about yourself I saw 2 husbands and 1 cat. Huh. Sorry, I’m so easily amused by my brain’s quirks.
    I’d be more amused if these sticky buns were in my oven about to come out. Do you think if I used regular steamed pumpkin and just cut back on the milksub it would work?

    Mmmm, looks wonderful. It’s getting to be that time again, pumpkin time! Although pumpkin never really went out of style, especially when you can get it in a can so easily. I bet the smell is outstanding when these are baking!

    these sound and look like heaven. i can only imagine how they taste…

    by the way, i was doing some recipe-searching around online and came across a plethora of pumpkin biscuit recipes. i read through the reviews on most of them, and there seemed to be a continuing theme : texture.
    most people claim that ‘pumpkin biscuits’ aren’t much like biscuits. which is deeply depressing, because biscuits are incredible, pumpkin is incredible, so the two combined can only be a fucking party in the mouth.

    so i was wondering [as i haven't had the chance to whip up your version yet], do yours actually taste like biscuits? i’m dying to know.

    oh, and please DO NOT STOP posting pumpkin recipes. in fact, you should post more.

    hey b., I’m not going to go and pretend I know exactly what you’re looking for in a biscuit, but compared to the ones I’ve had in the past, I’d say that yes, these do indeed taste like the biscuits I know. I don’t think they’re super flaky, though, so if that’s what you’re looking for…
