Spekuloos Waffle

2/3 cup ground Spekuloos
3 tablespoons whole-wheat flour
1 tablespoon raw sugar
1/4 teaspoon baking powder
pinch fine sea salt
1 heaping tablespoon semisweet chocolate chips
1/2 cup almond milk
1/2 tablespoon canola oil

Whisk Spekuloos, flour, sugar, baking powder, salt, and chips together in a medium bowl.
Pour milk and oil on top, stir until combined.
Prepare in your waffle maker, following manufacturer’s instructions.

Yield: 1 Belgian waffle

I never bother adding maple syrup or any other goodies to waffles, but I do enjoy eating (one half of) the huge Belgian monsters alongside a nice crispy, sweet and tart apple. Which kind of breaks my heart to think of, since it looks like it’s the end of season for good Pippin apples, which happens to be my favorite kind. Let’s observe a minute of silence, shall we?

    That bunny is too cute. And, there are speculaas recipes everywhere on the net. I don’t know how to make a link but you might try users.hubwest.com/hubert/speculaas.html. I’m pretty sure it’s an authentic recipe and the changes to veganize it shouldn’t be that difficult. Not for you anyway, just the usual butter and egg. Good luck!

    homemade speculaas/spekuloos/whatever would really be nifty to have around the house at all times, so thank you for the link Laurel. oh and the fact that they’d be free from any partially hydrogenated crap would be lovely too!

Well, I guess I STILL don’t how to make a link. I am though very curious because they sound wonderful only there’s got to be a way to replace all that butter that isn’t a whole cupful of Earth Balance although all those spices would probably ? cover up the flavor of that stuff. Anyway, good luck and I’m looking forward to your results.

    holy crap, these are beautiful. I’ve found that more often than not, recipes that are adapted from non-vegan ones require far less “butter”. so it might be possible to get away with using less.
    this makes me want to invest in a mold the next time I’m in Europe. I might even go on a quest to see if I can find an affordable one here in the States. thank you Laurel!
