Waffle and Apple

Spekuloos Waffle

2/3 cup ground Spekuloos
3 tablespoons whole-wheat flour
1 tablespoon raw sugar
1/4 teaspoon baking powder
pinch fine sea salt
1 heaping tablespoon semisweet chocolate chips
1/2 cup almond milk
1/2 tablespoon canola oil

Whisk Spekuloos, flour, sugar, baking powder, salt, and chips together in a medium bowl.
Pour milk and oil on top, stir until combined.
Prepare in your waffle maker, following manufacturer’s instructions.

Yield: 1 Belgian waffle

I never bother adding maple syrup or any other goodies to waffles, but I do enjoy eating (one half of) the huge Belgian monsters alongside a nice crispy, sweet and tart apple. Which kind of breaks my heart to think of, since it looks like it’s the end of season for good Pippin apples, which happens to be my favorite kind. Let’s observe a minute of silence, shall we?

    If I made these waffles and topped them with some spekulatius-butter…oh my good, even the thought sends me into a sugar shock (in a positive way).

    i LOVE the new banner! it’s fabulous! so sorry bout your apples…but if you could eat them year round, you wouldn’t appreciate them as much when you have them, right? that’s how i feel about tomatoes.

    That bunny banner makes me so happy! I love cute cartoon bunnies, especially when they have cuppies too!

    And I wish I could find that Spekuloos stuff here! Would I look at a German market? There’s one of those in my boyfriend’s hometown that I could check out next time I visit him….

    I found mine at the international food market, Bianca. but I suppose it could be possible at a German market too, even though the cookies aren’t German per se. keep me posted?

    The waffles sound so amazing, do you think that would work with any cookie? Like a gingersnap or something? I just don’t know where to find Spekuloos.

    Seen but never tried those pippins, perhaps I can catch them before they go. These spekluloos make me want to go to Ikea but that’s a terrible idea unless I want to be forced through miles of delicious furniture.

    apparently, the cookies sold at IKEA are more like pepperkakkors. you should be able to find spekuloos at international food markets, though, if you have one nearby.

    a long time ago, I was vegan for 2 years and I know sometimes I would kill for a rich creamy chocolate cake :-) that is probably why my will broke along the way :-( now after two years of crap diet, I am re-living my vegan journey again with my 21-day vegan challenge, as from what I was told, it takes three weeks to change one´s habits….

    I ll be back for more inspiration :-)

    That bunny is too cute. And, there are speculaas recipes everywhere on the net. I don’t know how to make a link but you might try users.hubwest.com/hubert/speculaas.html. I’m pretty sure it’s an authentic recipe and the changes to veganize it shouldn’t be that difficult. Not for you anyway, just the usual butter and egg. Good luck!

    homemade speculaas/spekuloos/whatever would really be nifty to have around the house at all times, so thank you for the link Laurel. oh and the fact that they’d be free from any partially hydrogenated crap would be lovely too!

    I don’t know if this will work but I got curious and looked a little further. Try this http://www.trifles.nl/2007/11/25/quest-for-the-best-speculaas/. Well, I guess I STILL don’t how to make a link. I am though very curious because they sound wonderful only there’s got to be a way to replace all that butter that isn’t a whole cupful of Earth Balance although all those spices would probably ? cover up the flavor of that stuff. Anyway, good luck and I’m looking forward to your results.

    holy crap, these are beautiful. I’ve found that more often than not, recipes that are adapted from non-vegan ones require far less “butter”. so it might be possible to get away with using less.
    this makes me want to invest in a mold the next time I’m in Europe. I might even go on a quest to see if I can find an affordable one here in the States. thank you Laurel!
