06.02.2009 Speculoos Waffles

2/3 cup ground Spekuloos
3 tablespoons whole-wheat flour
1 tablespoon raw sugar
1/4 teaspoon baking powder
pinch fine sea salt
1 heaping tablespoon semisweet chocolate chips
1/2 cup almond milk
1/2 tablespoon canola oil

Whisk Spekuloos, flour, sugar, baking powder, salt, and chips together in a medium bowl.
Pour milk and oil on top, stir until combined.
Prepare in your waffle maker, following manufacturer’s instructions.

Yield: 1 Belgian waffle

I never bother adding maple syrup or any other goodies to waffles, but I do enjoy eating (one half of) the huge Belgian monsters alongside a nice crispy, sweet and tart apple. Which kind of breaks my heart to think of, since it looks like it’s the end of season for good Pippin apples, which happens to be my favorite kind. Let’s observe a minute of silence, shall we?

    i LOVE the new banner! it’s fabulous! so sorry bout your apples…but if you could eat them year round, you wouldn’t appreciate them as much when you have them, right? that’s how i feel about tomatoes.

    And I wish I could find that Spekuloos stuff here! Would I look at a German market? There’s one of those in my boyfriend’s hometown that I could check out next time I visit him….

      I found mine at the international food market, Bianca. but I suppose it could be possible at a German market too, even though the cookies aren’t German per se. keep me posted?
