PB & J Pie

The blessed pair, in pie form? Amen to that.

I’ve tried baking the kinda gooey filling by itself for the same amount of time, simply upping the flour to 1 1/4 cups total. It’s good too, but I really love me some crust.

After trying one of many versions with all-fruit apricot jam, I must say strawberry, raspberry or any-berry jam works best, so as not to be lost in the peanut butter flavor. Also, it’s cuter to see the red jam escape around the edges.

PB & J Pie

9″ spelt pie shell (or any crust recipe you like), pre-baked at 400°F (200°C, or gas mark 6) for 10 minutes
1 cup (256 g) crunchy natural peanut butter (add 1/2 teaspoon salt to the recipe if using unsalted peanut butter)
3/4 cup (180 g) yogurt of your choice (or store-bought)
1 cup (192 g) raw sugar
2 teaspoons pure vanilla extract
1 cup (120 g for light, 140 g for whole) spelt flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 cup (160 g) all-fruit strawberry or raspberry jam

Preheat oven to 350°F (180°C, or gas mark 4).
With an electric mixer, cream peanut butter, salt (if using), yogurt, sugar, and vanilla.
In a separate bowl, combine flour, baking powder, and cinnamon.
Add dry ingredients into wet, stirring until just combined.
Divide what will be a stiff batter in two and spread it at the bottom of the pre-baked crust: use a frosting spatula or rubber spatula, start from the center, and bring the batter to the edges, just like you would do when frosting a cupcake.
Spread the jam on top of the first layer of batter.
Add the rest of the batter on top, using the same “frosting cupcake” method. Don’t worry if the jam escapes around the edges: it will bake beautifully and make for jelly-like bits once baked.
Bake for 30 minutes, or until golden brown and set.

Yield: 8 slices

    do you think using all-purpose flour would be equally as good as the spelt?

    absolutely. the fact that a-p flour absorbs more moisture than spelt wouldn’t be a big issue here, so subbing it 1:1 should be fine.

    Just when I thought I was out, the PB pulls me back in. Seriously, this is not good news for anyone with a slight PB OCD problem. The oozing jelly is like the blob pulling everything in its vicinity into the pain that will occur when you start eating it, because you can’t stop until its all gone…… I knew that image was far from innocent.

    So: before Raw Week (more like 10 days) earlier this month, we were running out of sugar–as in: completely (no sucanat, very little agave). And for some reason, I’ve been putting off buying some (read: too busy fine-tuning wedding plans). And NOW, I am powerless, with this recipe just taunting me.

    Oh, yeh!!!!! A whole cup of pb is awesome. Now, not to nitpick, but I’m confused – you’ve got a crust in the ingredients, but the instructions say to prepare a pan and spread batter into the prepared pan. I wouldn’t mind a no crust version!

    thank you for catching this, Diann! I corrected the recipe, BUT! I made it sans crust too, simply adding about 1/4 cup of flour to the mix, baking it for the same time, and it works beautifully too.

    Thus! I made this pie yesterday. I used sucanat, and strawberry jam, and your recipe for spelt crust, and it was beautiful indeed. Of course, I had to try a piece just about out of the oven, but Matt says that one can taste the strawberry jelly better once it’s cooled off a little. We had a friend over, and offered him a piece, and he almost started crying, it was so good (he said so!)-and all the while I was thinking, “Thanks, Celine!”

    OMG I made the PB&J pie today and was in HEAVEN the moment I took the first bite! Even my hubby who says he doesn’t like PB&J (HUH???!!) loved it. I used grape jelly and a store-bought crust, but other than that followed your recipe. Celine you are a genius! Now how do I refrain from eating the whole thing…??? :)

    Get ready when you bake this pie–as you can imagine, it disappears with a quickness. I used homemade spelt crust and strawberry jam. It was an all out fork-fest. The top layer of the pie baked into a sugary blanket, while the beauty underneath combined a savory, sweet, creamy, fruity, rich and delightful forkful of happiness. This says nothing of the fragrance wafting though the house while it’s in the oven, which will make people do almost anything for you while they wait for it to come out of the oven. The moment we all took our first bite, we realized this pie was not joking around. I cracked up when I noticed one friend in the kitchen sneaking leftovers, as he thought nobody was looking–busted.     I’ve never quite understood the PB & J thing, probably because it wasn’t practiced in our family (we were hooked on the PB and honey thing, though) and I’ve only ever tried one bite on a friend’s toast a loooong time ago. Now, this pie seems like the exact thing I needed to finally get the magic of the PB & J combo!
