Book Review and Giveaway: Raw for Dessert by Jennifer Cornbleet
A very simplistic picture for one of the tastiest ice creams I’ve ever had the pleasure to enjoy, and you know what makes it even more special? It’s completely raw.
I combined Jennifer Cornbleet’s recipes for Bitter Chocolate Sorbet and Chocolate Cookie Crust, forming the latter into 10 cookies and tearing 4 of them into small bits, adding them to the sorbet when it was almost done churning. Both recipes can be found in Raw for Dessert, but Jennifer is the coolest and let me re-post them here so that you can taste the rainbow awesomeness, too.
These two aren’t the only recipes I tried from Jennifer’s fantastic book: her Carob-Cashew Freezer Fudge is also mind-blowingly delicious, and so is her Avocado Crème Anglaise.
Another thing I love about this raw cookbook is that it does not call for bulky new machinery, like most dehydrators are. You can both healthily nourish your body and satisfy your sweet tooth without spending too much money, and that makes my stingy wallet extremely happy.
Wanna hear some good news? Two lucky readers will get to try Jennifer’s recipes, because the publisher was kind enough to provide two copies of Raw for Dessert to Have Cake readers. Bitter Chocolate Sorbet
used with kind permission of the publisher
recipe by Jennifer Cornbleet
1 cup filtered water
1/2 cup whole cane sugar
1/3 cup cocoa powder
Fresh raspberries, optionalPlace the water, sugar, and cocoa in a blender and process until very smooth. Transfer to a jar and chill in the refrigerator for at least 2 hours or up to 2 days. Put the mixture in an ice-cream maker and freeze according to the manufacturer’s directions. Serve with fresh raspberries, if desired.
Bitter Chocolate Sorbet tastes best if eaten immediately, but it will keep for 5 days stored in a sealed container in the freezer. Thaw for a few minutes before serving.Yield: 1 1/2 cups
Chocolate Cookie Crust
used with kind permission of the publisher
recipe by Jennifer Cornbleet3/4 cup raw almonds, unsoaked
1/2 cup whole cane sugar
1/8 teaspoon salt
3/4 cup cocoa powder
1/4 cup virgin coconut oil, meltedPlace the almonds, sugar, and salt in a food processor fitted with the S blade and process until finely ground. Add the cocoa powder and process to incorporate. Add the coconut oil and process until the mixture begins to stick together. Don’t overprocess.
Stored in a sealed container, Chocolate Cookie Crust will keep for 1 month in the refrigerator or for 3 months in the freezer. The crust doesn’t need to be thawed before using.Yield: 2 cups (enough for one 9-inch pie or tart)

Oh, YUM. I like the cookie crust idea very much as well. We have tons of almonds and like to use them in a variety of ways. I’m not a big raw foodie, because I LIKE cooking things and baking and I always seem to have high acid experiences with too much raw food but this really sounds workable and tasty.

The desserts I’ve made from Ani Phyo’s book are some of the best sweets I’ve ever had–raw or otherwise. I can’t wait to try this cookie crust! It’s amazing how inventive raw foodists can be when trying to meld their old favorite foods with their lifestyle. I guess that’s what a lot of people say about vegans, but it seems like raw takes it to another level.

This sounds amazing! Just letting you know though that raw sugar is not raw, it’s less processed. But agave is not raw either and it is widely used for sweetening raw food so I don’t see any harm in using it!

I would love that cook-book. My son actually went out and bought Ani’s Raw cook-book a while back and makes goodies from that. If we added this one to our collection we’d really be set for desserts!

I think that this is a dispute over the meaning of standard. I’m don’t think that “standard” suggests “not fabulous.”
The sorbet recipe is exactly the same as (for instance) the one from David Lebovitz’s ice cream book, only without the cooking step to dissolve the sugar. However, when something is that good, it would be silly to mess with it, because it is just about perfect. For the same reason, it’s natural that a talented person trying to come up with a chocolate sorbet would arrive at these proportions. They make for _really good_ sorbet.
Avocado Crème Anglaise, on the other hand, I have never seen, but it is now something that I am definitely going to try…

looks delicious. I’ve dabbled with the idea of raw cooking but without a dehydrator it’s a bit tricky and costly to leave the oven on a low setting for hours and hours. I’m sure they’d be some great ideas in Jennifer’s book so fingers crossed for me :o)

Wow! There are definitely a lot of comments for this recipe/book give-away ;0 . I am wondering what the consistency of the chocolate sorbet is like since the ingredient list is very short and none of the ingredients included seem like they would produce creaminess ? I guess I’ve never had choco sorbet before I will have to use this recipe and either get an ice cream maker or freeze it in ice cubes and food process it..Any suggestions ?

how to describe this sorbet…it’s pretty much sorbet-like? mine didn’t get icy or icky after spending time in the freezer.
even though Jennifer says it tastes best straight out of the machine, I find it needs to hop back into the freezer to firm up, otherwise it melts fairly promptly.
it definitely has creaminess to it, which the cookies probably helped with.
I have already heard about processing ice cubes into frozen desserts, but even though I have a fairly decent food processor, I still wouldn’t trust it not to throw a fit and break down on me. but that’s just me.
just in case you are considering making ice cream more often than once, you can find ice cream makers for a fairly affordable price: I have a Cuisinart that cost me about 50 buckaroos, and I use it all the time.

I’m obsessed with raw desserts because they’re so fun to make and there’s no guilt! I can’t wait to try that chocolate sorbet (luckily, my ice cream maker is ready to go in the freezer!!)

Woohoo! Probably the best ice cream I’ve ever had has been raw ice cream (at Pure Food and Wine); I also think that raw chocolate/truffles are better than ‘cooked.’ I’m no raw foodist, but you just can’t argue with taste. Thanks for the great-looking recipe.
