I made a couple more batches of Altella (even simpler, using ready-made nut butter instead of whole nuts) and decided to put it to evil use by having puff pastry give it a big bear hug. So there you have it: super simple Altella Puffs.
Oh by the way, Halte-là! = Stop!, in French. Every time I say Altella (and I say it a lot), it sounds a bit similar so I just can’t fight the feeling.
Altella Puffs:
Non-stick cooking spray
1 sheet vegan puff pastry, thawed
Handful flour for counter
Half recipe Altella
Bit of nondairy milk, to brush topsPreheat oven to 375°F (190°C, or gas mark 5). Lightly coat a jumbo muffin tin with spray.
On a lightly floured counter, roll out the puff pastry about 1 inch (2.5 cm) larger than its original size. Evenly spread Altella on top. Cut into 6 strips. Roll each one up. Place into muffin tin, filling side up. Lightly brush top with milk.
Bake for 25 minutes, or until the pastry is golden brown. Carefully remove from pan and let cool on a wire rack.Yield: 6 puffs
Variation: Top with optional simple glaze – Combine 1/2 cup (60 g) powdered sugar, 1 tablespoon (15 ml) nondairy milk and 1/2 teaspoon pure vanilla extract, until smooth. Drizzle over puffs.
