25.10.2011 Baking the easy way out.

It looks like I’ve pulled a disappearing act again. Work and tiredness are still going full throttle, which is to say that not much has been going on in the kitchen, and that most of the eating that took place has been kept fairly basic, even occasionally coming right off the shelves from stores that offer decent vegan options.

These muffins are the blueberry raspberry oat bran ones from (where else?) Trader Joe’s. I used to eat them all the time when I first put my vegan hat on, but then I started baking so much that there was no reason to keep on outsourcing. They’re made by Zen Bakery and come in a variety of flavors.

I appreciate the fact their sweetness is rather subdued, and that they taste (and are) healthy without it being a derogatory description. Mine have to be kept in the fridge because our apartment is such that if you put any sort of bread item on the counter for more than one day, mold will throw parties on it and not put you on the guest list.
The refrigeration makes them a bit tougher and drier than I like, but I’m also not really big on green, fuzzy stuff, so … you take the good, you take the bad.

You know what sounds like a dream? A vacation. I haven’t taken the time to go back to Switzerland or to have much of a life (wah wah, I know) for 2 years now, and it’s starting to show. There’s a new project that will keep me busy until the beginning of March, but after that, I’m a goner for as long as it takes to feel Heidi-ish again.

    Oh, those muffins look just perfect. Sorry to hear about things right now. If it means anything, I can relate, so you definitely aren’t alone on the work and tiredness thing. Switzerland seems like such a beautiful country, I’d relish the chance to visit. I hope you are able to travel back soon, Celine!

    I get those muffins now and then! I know what you mean about them tasting healthy in a good way. I like my bran muffins to taste…branny, or something.

    Was the last time you took a trip the Switzerland/Vienna trip? My friend, you deserve a long break.
