Cashew Butter and Hot Pepper Jelly Tempeh Sandwiches
Yield: 4 sandwiches
For the tempeh
1/4 cup (60 ml) reduced-sodium tamari
1/4 cup (60 ml) vegetable broth (or 1/4 cup water with 2 teaspoons dried shiitake powder)
2 tablespoons (16 g) nutritional yeast
1 tablespoon (15 ml) blackstrap molasses
1 to 2 tablespoons (15 to 30 ml) vegan sriracha sauce, to taste
1 tablespoon (15 ml) roasted peanut oil or really any oil of choice
1 teaspoon ground cumin
1 teaspoon chipotle powder or other mild to medium chile powder
1 teaspoon liquid smoke
1 teaspoon onion powder
1 pound (2 packages, or 454 g) tempeh, each block cut in half widthwise, then lengthwise, then vertically to make 8 small patties
Nonstick cooking spray
For the sandwiches
4 vegan onion bagels, bread rolls of choice, or 8 slices of favorite crusty vegan bread, toasted at the last minute
Roasted cashew butter (enough to generously coat one side of the bread)
Vegan hot pepper jelly (enough to generously coat one side of the bread)
1 large English hothouse cucumber, thinly sliced
To make the tempeh: Add all the ingredients (except tempeh) to a 9 x 13 inch (23 x 33 cm) baking pan, and whisk to thoroughly combine. Soak the tempeh in the marinade on every side, and let marinate in the refrigerator for at least 1 hour, up to overnight.
Preheat the oven to 400°F (200°C, or gas mark 6). Lightly coat the top side of the tempeh with cooking spray. Bake the tempeh in the marinade for 8 minutes. Turn the slices over, lightly coat with cooking spray, and bake for 8 minutes longer or until the liquid has been mostly absorbed but is still saucy. Can be served warm or at room temperature. Or even cold, if you’re like me and enjoy eating cold stuff. Weirdo.
To assemble, make sure the bread is still warm from being toasted so that the cashew butter is easy to spread. Spread enough cashew butter to generously cover one half of toasted sliced roll, or one slice of bread. Spread enough hot pepper jelly on the opposite side of the sliced roll, or slice of bread. Add 4 slices of tempeh on cashew buttered side of bread. Top with a generous handful of sliced cucumber. Top with 1 slice of hot pepper jellied bread. Repeat with remaining sandwiches. Serve immediately.
